Evaporated milk is used for the white sauce i in this casserole, making It 1 5 creamy smooth and rich. On- ions, green pepper, celery and mushrooms blend with the fish and cheese to give it a distinctive flavor. This casserole can be served . . cither in individual casseroles or in one large two-quart casserole. . Layers of salmon, cooked peas, cream sauce, and crunchy pota-' to chips arc arranged In the cas- ' serole. Salmon Casserole 2 qt. casserole 6 servings 375s, 35 minutes M cup butter v H cup chopped onion 'i cup diced celery V. cup chopped green pepper M cup sliced mushrooms 3 tablespoons flour 1J4 teaspoons salt teaspoon pepper 1 tall can evaporated milk (1?4 cups) 1 cap water 1 1-pound can salmon, boned & flaked 2 enps fresh, frozen or canned peas 2 cups crushed potato chips Saute onions, green peppers, celery, and mushrooms in melt- cd butter until lightly browned. Add flour salt, and pepper and mix well. Gradually stir in the evaporated milk, then the water and cook until smooth and thickened, stirring constantly. Arrange layers of salmon, peas, cream sauce, and potato chips In a buttered 2-quart casserole. Top with a layer of potato chips and dot with butter. Cover and bake at 375 for 25 minutes. Uncover and bake 10 minutes longer or until the top is brown. When using Individual casseroles, cut the cooking time in half. |
