Editor I wanted to write and thank the Spanish Fork Post of the American Legion and an other groups who participated in setting up the striking field of flags in Spanish Fork Cemetery for Memorial Day weekend. My brother, David Gessel, told me that you would be an appropriate person to receive such a letter and that you would be able to pass on my gratitude to an those who were involved in creating that magnificent display. My family and I were visiting the Spanish Fork Cemetery on Memorial Day in remembrance of both of my parents who passed away recently. My mother, Mary Louise Gardner Gessel, who is a native of Spanish Fork, passed away in June 2006 and my father, Clyde David Gessel, passed away in April of this year. Both of my parents are veterans of World War II and my father also served in the Air Force Reserves. It literally took my breath away to see that stunning display of flags and then discover that both of my parents were honored with their names on individual flags. I also found the flag for TTic Spanish Fork News is published each Wednesday for $37.50 per year in area and $41.50 out of area by J-Marc, 280 North Main St., Spanish Fork Utah 84660. DEADLINES Weddings, anniversaries, missionaries, 1st birthdays, articles, photos, letters to the editor Friday, 12 p.m. Display advertising and c assified my grandfather, Reuben Delos Gardner, of Spanish Fork, who was also active in the American Legion. I have always loved the Spanish Fork Cemetery. It is a beautiful, peaceful place that seems as timeless as the majestic mountains which surround it in the distance. There is a special spirit there. The addition of that field of waving flags, each carefully placed, was a perfect tribute to those who have served their country nobly, honorably and well. The flags gave me yet another opportunity to reflect on all the seemingly ordinary people, like my parents, who did extraordinary things during their lives in service to the country that they loved. When my dad was presented with the flag that was draped across my mother's coffin, he stated with tears in his eyes, "I love this flag. I love this flag." My parents are my heroes. Please convey my thanks to all those who made this beautiful tribute a reality. I, for one, win never forget it. I know — hard to believe (sorry to I had to take a laugh break.) I wrote how you could brush your teeth, make a poultice and refresh your fridge with baking powder. You can '/, you have to use baking soda. Sorry about that, but it got me thinking, how many of you know how to make your own baking powder? Actually it is quite easy. For one teaspoon worth of baking powder, simply mix [A teaspoon of cream of tartar and !4 teaspoon of baking soda. I will continue to purchase the pre-made baking powder, but I have used this recipe as an emergency backup and it works quite well. Since we have brought up the subject of cream of tartar (from the last recipe), I wanted to find out a bit more about it. I have always been curious about cream of tartar and was once told that it was a by-product of wine making. Come to find out, it is. I went to www.ochef.com to find out exactly what cream of tartar is and what it does. This is the best explanation that I found: "Cream of tartar is the common name for potassium hydrogen tartrate, an acid salt that has a number of uses in cooking. Now, before you get all jittery about the thought of cooking with an acid, it's worth noting that milk, brown sugar, steak, plums and just about every other food we eat is acidic. In fact, egg whites, baking soda and milk are the only non-acidic (alkaline) foods we have. Cream of tartar is obtained when tartaric acid is half neutralized with potassium hydroxide, transforming it into a salt. Grapes are the only significant natural source of tartaric acid, and cream of tartar is obtained from sediment produced in the process of making wine. (The journal Nature reported some years ago that traces of calcium tartrate found in a pottery jar in the ruins of a village in northern Iran are evidence that wine was Courtesy photo CREAM OF TARTAR: The cooking powder that we use in our everyday recipes is actually a by-product in the making of wine. Cream of tartar is best known in our kitchens for helping stabilize and give more volume to beaten egg whites. It is the acidic ingredient in some brands of baking powder. It is also used to produce a creamier texture in sugary desserts such as candy and frosting. It is used commercially in some soft drinks, candies, bakery products, gelatin desserts, and photography products. Cream of tartar can also be used to clean brass and copper cookware. If you are beating egg whites and don't have cream of tartar, you can substitute white vinegar (in the same ratio as cream of tartar, generally 1/8 teaspoon per egg white). It is a little more problematic to find a substitute for cream of tartar in baking projects. White vinegar or lemdti juice, in the ratio of three times the amount of cream of tartar called for, See CREAM OF TARTAR • A3 Correction Trailer park Last week we incorrectly reported that Allen Thomas' trailer park was sold to the city.
