Meal Makers Make the "something hot" a midsummer menu a sandwich it's a delicious switch for lucky eaters and especially easy on the cook when she has recipes like the two below in hand. That hearty combination of buttered rye bread, corned beef, Swiss cheese and sauerkrautthe popular Reuben Sandwich takes on new character when it's waffled or grilled. And note that you needn't even go near the stove to serve this hot sandwich-j- ust plug in your electric waffle iron or grill. For a zippy new accompaniment to the Reubens, flavor dairy sour cream to taste with chili sauce and prepared horseradish. The stove and oven are involved in turning out Hot n Sandwiches but only briefly. And it's well worth the little effort when you consider that the recipe turns out six hot sandwich servings at one time. Good nutrition must be made meaningful to teens. They must be able to think of It as part of their world, as an Important factor in the achievement of their goals and ambitions. This can be done In many ways. Here are four: 1. Popularity: Every teen wants to be liked by everyone In his peer group. His peers Judge him by how he looks, what he says, what he does. Improved nutrition will improve a teen's appearance and performance. Encourage your teens to be popular. And present good food habits as a help in achieving that popularity. 2. Vitality: Turn want to be like people with a lot of get up and go: the big guy who scores the winning touchdown, the cute little coed who's a whiz on the dance floor. You can Involve them by way of the Basic Four Food Groups which are: (1) meat, poultry, egos, fish; (2) breads and cereals; (3) fruits and vegetables; (4) milk and dairy foods. (According to nutrition experts, including Kerne from each group diet.) Ask your teens helps insure a to check family meals against the Basle Four Food Groups. And encourage them to select meals accordingly. Recognizing the importance of motivation in the improvement of teen nutrition, the American Dairy Association has undertaken an advertising campaign of special Interest to young people. The theme of the campaign Is "milk gives you a big lift that lasts." And it talks to young people in their language, telling the benefits of milk in terms they can respond to. It aims at convincing them milk provides the energy and vitality they themselves want and need. This campaign will start many youngsters thinking positively about good food and good nutrition. But if it is to be ultimately successful, it must be backed up at home. So we are asking all parents to take an active interest in motivating your teens to better eating habits. It's not Impossible to get a hip teen to eat three squares a day. And the rewards are certainly worth the effort, aren't they? Dorft Preheated 6 slices white bread 2 tablespoons butter Cooked chicken or turkey, tablespoons flour 4 teaspoon salt V teaspoon pepper 1 teaspoon instant minced onion 2 cups milk 2 egg yolks, beaten Va Parmesan cup cheese Toast bread; remove crusts and spread with 2 tablespoons butter. Arrange in pan; top with chicken and Blue cheese. In a saucepan melt 4 tablespoons butter; Mend in flour, salt, pepper and onion. Remove from heat; gradually add milk. Return to heat and cook, stirring constantly, un til mixture thickens. Add small amount of hot mixture to egg yolks; return all to pan and cook z minutes. (Do not boil.) Spoon over sandwiches; with Parmesan cheese. Bake 15 minutes. Makes Serve immediately. six servings.
