In general, the less hydrogenated the product, the closer to a liquid state it is. This also means it will have less trans fatty acids. Tub margarine has less than stick margarine and squeezable margarine has less than tub margarine. Hydrogenated fats: This is a process used to harden oils that would otherwise be a liquid at room temperature. It is used to keep peanut butter from separating and to form vegetable oils into stick margarine. Some oils that are still in liquid form are lightly hydrogenated to make them more stable for use in deep fat frying. Saturated fat: These are generally believed to be the worst fats for the cardiovascular system. Saturated fat constitutes a large percentage of the fat in "tropical oils" such as coconut (77 percent) and palm oil (51 percent). The lowest percentages of saturated fat are found in canola (6 percent), safflower (9 percent) and sunflower oils (11 percent). Saturated fat is also found in animal fat - 41 percent in lard, 30 percent in chicken fat and 5 percent in beef Woods Cross.
