Add green pepper and celery and cook until just tender. Blend in flour, salt and pepper. Gradually stir in milk. Cook and stir until thickened, about 5 minutes. Fold in carrots, pimentos, potatoes, and half the cheese. Pour into a greased shallow baking dish or two smaller ones. Bake 30 minutes at 375. Top with remaining cheese and bake 5 minutes lon3a 20-2- ger. Serves 12. Golden Potato Cones Instant mashed potatoes, butter, salt, water, 2 eggs separated, 'A cup flour, cup sliced almonds, shortening or oil for fry1 ing. 4 Prepare cups instant mashed potatoes using the water, butter, and salt as per package instructions but omit milk. Beat in egg yolks. Divide into eight even mounds and shape each into a cone. Beat egg whites slightly in a pie plate. Spread flour and almonds on separate pieces of waxed paper. Carefully roll each potato cone in flour, then in beaten egg white and almonds. Beat eggs, salt and pepper together with fork. Pour egg mixture over potato mix. Fold in sour cream and chives. Divide into equal parts; place in potato foil boats, top with cheese. Place in hot oven until cheese melts. Bacon Stuffed Potato Cut a potato in half. Put slice of bacon in between halves. Put back together and wrap in foil.
