Show iaaaaaaasaaaaaaaaaaaaai: The View From Here By Ruth Roth laaaaaaaaaaaaaaaaaaaa Martin and I visited Virginia together recently and exchanged news on our families and the things which have happened since we were together a few months ago. She explained that she couldnt remember a quieter summer at her house than this one. She has had four children and enjoyed the task of raising them and caring for their various needs. But, just within the last few weeks each child has left home. First of all her youngest son was called to serve his military service. In June her eldest daughter was married to the boy she had been engaged to for six months. Her oldest son went from school into a job in the north part of the state. Her youngest daughter has taken a ten weeks tour, and Virginia says it has caused her a whole slate of new problems to cope with. She says that one of the biggest ones is the food schedule. She finds it especially difficult to make the transition from cooking for six hungry people to the task of cooking for just two. She went on to explain. (I am nearing the same point in my life so I hoped to get some ideas to help me.) Virginia is used to cooking and serving roast beef each Sunday. That used to mean that she would have enough, if she was lucky, to make another meal from left overs. Not so any more. Now come Monday morning she has three fourths of the meat left Her husband Frank didnt object when they had hot beef sandwiches that day, but a couple of slices didnt make the roast look much smaller. Virginia decided to serve stew on Wednesday so she used a lot of meat and a few vegetables and the rest of the left over a large stew. gravy and ended up with, Frank isnt too fond of any kind of soup even if it is called stew but he was hungry so he did eat one dish. When Virginia viewed the large amount of nourishing stew still left she knew it was too good to waste so she put it in the freezer temporarily. They had cold beef sandwiches for lunch another day. The rest of the roast was made into hash but it wasnt too much of a success. Frank had never eaten hash before and he wasnt anxious to eat it again so he didnt intend to give any compliments on it. His few comments did all that was necessary to let Virginia get the idea, 'Hash is nothing really, but a dry stew." Virginia says that she was tempted to use the stew in the freezer for a meat pie filling but she decided after the hash that she had better wait a while. The above figures plus balances on hand of $129,943, in the M & 0 budget, $45,223 in school lunch fund, and $135,462 in the Capital Outlay fund makes the total budget revenue estimate of $7,417,834. Education is big business and in future articles we will discuss expenditures in perhaps a more meaningful breakdown to show where the money is actually spent. $408,124.
