They were accompanied by his brother and wife, Mr, and Mrs. Victor Christensen of Orem. COOKS Corner by Mrs. Ruth Rothe Young Pam Boyd, 13, daughter of Robert and Pat McClellan Boyd, Tempe, Ariz., is spending a month in Payson with her grandmother, Mrs. Dorothy McClellan, If you were planning a large affair and asked a dozen womentobringsomepickled beets to use in the meal chances are that you would have a dozen different varietie s of pickled beets. Some women make them and other relatives. very spicy, others like theirs withasour, tart flavor, a few people put onions in theirs. My family rely upon the recipe my mother used. It is a sweet and I think, delicious pickel, and can be eaten with a hot or cold meal. MAMAS PICKLED BEETS To make 8 quarts wash, cut off tops and boil until tender about 12 bushel of beets. Plunge into cold water and remove skins, cut into desired size. Add to syrup. Bring to boil and bottle. Syrup is made by combining, 6 cups sugar, 10 cups water and 4 cups vinegar. When cooking beets many housewives save some of the water to make Beet Jelly. It has a very good flavor and many think it tastes like currant jelly. Some juice can be put in the fridge for use at a it is best to make later time but beet jelly the same day the beets are cooked. They also worked out plans for the H float which was entered in the Fiesta Days Parade and which will be in the Labor Day Parade in Payson, They decided to teach a few of the songs to the group at Community Day. Brother Dunford illustrated the in the Pledge with examples in the Saviors life. He likened them to a wheel which is well rounded. The sisters took in the new shows, found interesting places to eat, and generally caught up on family news and gossip. Garner on Friday, July 24, Mr. Vickers has retired from the United States Civil Service where he has worked for the past 30 years. He has been stationed for most of the time at the Salt Lake City office but for the past four years he has worked out of the Washington D.C. office and lived in Alhandria, Va. They are planning on making their home somewhere along the Wasatch front. : Convention plans family recreation facilities. It was conducted by the Association of Western Hospitals and sponsored by the Utah State Hospital Association and Utah State Hospital Association Council on A 20-2- Hospital Auxiliaries. Primary purpose of the institute was to train and educate hospital personel and volunteers on basis of need in the area. It was one of several in a long range program conducted for benefit of auxiliary board members and others. AH attending received certificates. BEEF CORNWHEELS 1 12 pounds ground beef cup cracker crumbs 1 3 cup finely chopped onion cup milk 12 teaspoon salt 18 teaspoon pepper 18 teaspoon thyme Mrs. Hazel Gasser was honored by her family Sunday afternoon when she celebrated her birthday at the home of her son and wife, Mr. and Mrs. Ralph Gasser, in American Fork. Place on a rack in an open roasting pan. Bake at 350 degrees for 30 minutes. Brush catsup over loaf and continue baking 30 minutes. Serves 8, FRESH APPLE CAKE 2 cups flour 2 2 cups granulated sugar teaspoons baking soda 1 teaspoon cinnamon 12 teaspoon 2 nutmeg eggs 12 teaspoon salt 4 cups finely diced raw apple 12 cup chopped walnuts 12 cup soft butter or margarine Powdered sugar Sift Preheat oven to 325 degrees. flour, with granulated sugar, soda, cinnamon, nutmeg, and salt. Add apple, nuts, butter, and eggs. Beat until thoroughly mixed. This will be thick. Turn into prepared pan. Bake 1 hour or until top springs back when lightly pressed with fingertip. Cook slightly in pan on wire rack. Sprinkle with powdered sugar. Serve warm and top with whipped cream or ice cream. Serves 12. YES, We're still in business! Several family members have visited at the home of Mrs. Darrel Brown in past weeks. Mrs. Jay Brown and three children of Rowland Heights, Calif., spent five weeks in Provo while she attended an enrolled course at Brigham Young University and during this time visited frequently in Payson. Mr. Brown arrived last week for a short visit and took his family back to the coast with him. Other visitors have been Mr. and Mrs. Jay Brown and five children of San Diego, Calif. Mrs. Brown and their daughter and one of their sons went on to Montpelier, Idaho, where they attended a wedding, while Mike and three other sons and his mother took a trip to Strawberry and spent a few days at the Brown cabin. Mrs. Jones brings news that her brother is retiring August 1 after employment as chief auditor for the United State Reclamation Service, and the couple plan to retire in Florida. nt Duplicate of poem published say Its a smaU world, after in regard to a poem published last week in the Payson Chronicle. The poem was first published in the local paper after being sent from Viet Nam by Brent McClellan, who penned it You might all after being stationed there only a short time. He titled it Viet Nam and the Draft Dodger and sent it to his wife, former Marcia Christensen of Goshen, who submitted it to the Chronicle. It was published Sept. 19, 1968. Brent is the son of Mrs. Dorothy McClellan, Payson. The poem published July 23, 1970, in the Chronicle is titled Living and Dying, written by a G.I. A few words have been changed and a line or two has been placed in a different place, or deleted altogether. Its path back to the Chronicle seems to have been thus: Brent McClellan showed it to his buddy, Brent Deuel of Santaquin, who has since and is again in Viet Nam. Mr. Deuel said he was going to submit it to a servicemans newspaper, and evidently he did. Someone from the Payson area saw it and clipped it out and sent it to the Chronicle, not knowing it had been published before. David; and also with her father inSalt Lake City and her brothers and sisters in Orem. Mr. Broadbent expects to join her later. Capt. John Wilson, a career officer with the Army, has installed his wife, former Susan Johnston of Spanish Fork; and their children, a son, 7 and a daughter, 2; in a Payson apartment, and left Monday morning for Ft. Stewart in Georgia, where he will enroll in a course in flight school. He expects leave later for another tour of duty in Viet Nam. While on leave he visited with his mother, Mrs. Ruby Wilson and other members of the nine-mont- hs David Broadbent arrived last week from Van Nuys, Calif., where he has been attending college, and is visiting with his parents, Mr. and Mrs. Roy Broadbent, prior to leaving for Hawaii, where he will continue his schooling at the university there.
