Mrs. Jensen delights in preparing Country Breakfast for husband, guests at their haven. t O' Bv Donna Lou Morgan Tribune Food Editor ROCKVILLE, Washington County Mmm, a country breakfast Nothing under the sun could be more tempting than the likes of Fruit Compote, Danish Ebelskivers, South- 5? ern Buttermilk Pancakes, Scrambled Eggs with bacon and link sausages, Danish Breakfast Ring, Prune Swirl Especially if this repast happens to be prepared by terrific cook, Mildred Jensen, and served in the lovely Jensen home located in Rockville, a tiny, but charming, Southwestern Utah community Rockville is for renewing Mrs Jensen has a friend who calls and says, You home' I need to come sit on a rock " The friend drives to Rockville from St George for an about 40 miles afternoon of complete R and R (rest and relaxation) "Then she seems renewed and returns to her busy life," Mrs Jensen smiles 'Its tranquihzing here Theres something about sitting on a rock and looking at the beautiful scenery that makes ever) thing right with the world ' She should know Mildred Jensen and her husband, Don, have lived in Rockville, located at the gatew ay to Zion National Park, since April 1, 1982 The former Salt Lakers bought their lovely Rockville home in 1980 "After our purchase, we took every opportunity to drive down and enjoy our 'touch of heaven' located in this beautiful sleepy community," Mrs Jensen commented W e could hardly wait to move here ' She said several years before, they had purchased a place in St George' still have it And we enjoy every minute we spend there But, I told Don I needed another spot where I could just sit on a rock w hen I w anted w hile to and meditate gazing at the elegant surroundings This was it'" she exclaimed When Mrs Jensen retired from Mountain Fuel Supply Co in 1982, she and her husband (also retired from MFS) packed up everything and We , I, P lf 1 $ moved to this quiet Rockville retreat Before her retirement, she was corporate and executive assistant to the chairman Thats why people cant believe Im down here, she said "My entire life has revolved around quite the opposite of what we enjoy here in Rock- ville "I was enormously involved in my corporate responsibilities along with civic commitments in Salt Lake as I served on the Chamber of Commerce board, was president of the Junior Achievement Board and on and on My life was made up of one deadline after another and one meeting after another I was ready for a change " It happened when their address became RFD 'We love living here, although it has been a big change for Don and me Most of our lives we were citv folks " Mildred Jensen was born in Northern California but moved to Salt Lake when she was a child Her husband, a Provo native, spent his youth on a farm in Richfield before moving to this valley city to join the work force The Jensens have been married 31 years "All our married life Don and I had dreamed of getting into a rural setting Our dream came true when our Bud" Kastler, good friend. Each time we passed this house as we were driving through Rockville, Don would say he wanted it When the house became available, we snatched it up quick," Mrs Jensen laughed Don and I have always felt it's important to have some plans for retirement, then follow through with them Acquiring this house and moving to Rockville was the realization of many years of planning We think it was a good decision We have around us'all the things we love, including many good friends from Salt Lake and across the country who also have places here Mrs Jensen said she believes Rockville is really a state of mind rather than a place because If you don't have the right attitude, you wouldn t want to be in Rockville "If you wanted all the conveniences of the city, you wouldn't like it here," Mrs Jensen pointed out "There isn't really much going on here The population in Rockville is 125, without counting the chickens The power goes out periodically, sometimes once a day (Lucky I cook with gas ) And, of course, there's no place to shop right in our little community But I've loved every minute of living here Don and I think its the fountain of youth Each day Im thankful I can enjoy the serenity here and the beautiful scenery," Mrs Jensen smiled This ambitious woman does much more than gaze at the scenery To look at the manicured" acreage surrounding their immensely comfortable Rockville home is to know a perfectionist calls the shots Im up early, early every morning out 'doing my thing in the yard, she said "Its .ascinating for me She said mornings in Rockville are beautiful They make for good appetites, which is exactly why I love to cook a big country breakfast like this one when guests are here or when we are alone " Her brown eyes sparkled as she said they often have guests in their home "We love first fourths, then cut each fourth into thirds) Turn each piece e up to give a petal effect Let rise, covered, until doubled Bake on greased baking sheet at 350 degrees for 25 to 30 minutes or until done Remove from pan Dec- orate with fruits and nuts, as de- sired Dribble with Confectioners' Sugar Icine Serve warm or cold I With other half of dough, you can make Prune Swirl by rolling dough into a 12xl6-increctangle Spread with Prune Filling to within of edge Starting from long side, roll as for a jelly roll Pinch seam to seal Tuck ends under and pinch to seal Place on greased cookie sheet, seam-sid- e down Let rise until doubled Bake at 350 degrees for 25 to 30 minutes, or until done Let cool Top with maple con fectioners' sugar icing, if desired cut-sid- Filling u A Use one-haof the dough Roll into rectangle 9x16 inches about thick Spread with melted butter Sprinkle with Filling roll as for a jelly roll Cut small pieces from each end to aid in joining Press ends together to form a ring Cut with scissors from outside nearly Jp- center of roll (cut ring cup milk scalded 4 tablespoons shortening h cup sugar teaspoon salt 2 eggs, beaten 1 package active dry yeast G cup lukewarm water 5 to 6 cups flour, divided Melted butter 1 Scald milk, pour over shortening. sugar and salt Cool until lukewarm Add beaten eggs Dissolve yeast in lukewarm water, add to mixture with 2 cups of the flour Beat until smooth and well mixed Add enough additional flour to make a soft dough Turn out on floured surface, knead for about 2 minutes Form dough into a ball, place in greased bowl Cover and allow to rise until doubled Punch down h Filling cup finely chopped candied G fruits and peels G cup chopped pecans or nuts cup sugar 4 1 G wal- 1 teaspoon cinnamon Mix candied fruits and peels with pecans, sugar and cinnamon Use as directed above This makes enough filling for one ring Confectioners Sugar Icing with vanilla and milk, mix until cup confectioners sugar smooth Use as directed above teaspoon vanilla flavoring I to 2 tablespoons milk Combine confectioners' sugar NOTE: Use G teaspoon maple flavoring in place of vanilla for maple confectioners sugar icing Prune Filling IG cups cooked, pitted prunes K cup liquid (use liquid prunes were cooked in) G teaspoon maple flavoring Helen Paulsen is hoping good cooks will share recipes for cold Pasta Salad to complement steaks, chicken and other barbecued specialties.
