Add remaining liquid, pour into sauteed mixture Bring to a boil. Add bacon, sugar, salt and pepper to taste. Stir in cut-upotatoes; mix gently. Garnish with parsley. In a heavy skillet, cook bacon or salt pork until browned. Remove meat and saute onion and celery in meat drippings until clear. Add garlic and parsley, stirring for 30 seconds more. Add meat, seasonings and remaining ingredients to beans. Allow beans to come to a boil, then reduce heat to a simmer. Cook for 2 to 3 hours, stirring occasionally until a creamy consistency is achieved. Add more stock if needed during cooking. When finished cooking, take out star anise.
