Anyone who has had even one glass of champagne must be at least a little curious about the place where it was first produced. And, now that Americans have rediscovered champagne, perhaps it is time to visit the homeland of our most festive drink. That homeland is a lovely chunk of real estate stretching, roughly, between Epernay and Reims, the principal centers of the champagne industry. There are 85,000 acres in the Champagne region, about 62,000 of those planted with the noble stocks": the Pinot noir, Pinot meun-an- d Chardonnay grapes that are used to make champagne. Any visit to Champagne should naturally begin with a visit to the Hautvillers Abbey, where Dom Perignon discovered how to keep the sparkle inside the bottle. He is buried there, with a modest monument saluting the man who has brought so much joy (and so many hangovers) to the hedonists of the world. After this pilgrimage, it is time to visit one of the vast champagne cellars of the region, many of which give guided tours, sometimes followed by a sampling of the bubbly. Moet L Chandon in Epernay has one of the largest cellars, a massive chalk cave stretching for more than 18 miles and holding 54 million bottles, all resting at 51 degrees, and all bathing in a humidity of 80 percent the perfect conditions for devel ment, when the neck of the champagne bottle is dipped into a freezing solution and a small block of ice is formed, containing the deposit of silt in the bottle. With a loud pop it shoots out of the bottle, a tight cork is then inserted, and the finished champagne is sent back to age a few years before you open it for Aunt Hatties birthday party. But you learn more than just the technical side of champagne. You also discover some of its romance. You learn that champagne was so prized that many of the worlds famous, including Pope Leon X, Henry VIII of England and Henri IV of France all owned vineyards in the region; and that Marie Antoinette was such a devotee of champagne that the traditional saucer-shape- d glass was designed in imitation of her breasts. You will be told that Madame de Pompadour, the mistress of Louis XV, said that champagne was the oping fine champagne.
