Whether j it's early break- Y fast on this morn-- t or a ing after leisurely brunch , make certain i ' f I V 'jn Ci that the first 1 a meal of 1984 is an affair to remem- ber. and Holly Colby Smith, home for the holidays from New York, plan to do just that. This terrific twosome will ring in the New Year by serving a lovely and approthat handy-dand- y priate brunch meal which combines two meals in one. They know its a welcome time-savfor the cooks and a boon to sleepyheads who do not enjoy hearing reveille, particularly after a night of revelry. Pleasers The Smiths are making certain the menu for special someones inpalate-pleaser- s cludes that will allow them to sit down and enjoy the meal with their guests. When Holly and Colby Smith stepped off the plane before Christmas, they had a tasty slice of New York, New York carefully tucked under their arms in the form of precious packets of fresh specialties from Balduccis, their favorite store in Greenwich Village. They plan to use these treasures in holiday meals while here in Salt Lake City. "We are so caught up in the marvelous fresh items we can buy at Balduccis, Mr. Smith said. "Holly and I wanted to share the goodness of them with our families here. The deli features the freshest of everything. And, believe me, you can get everything there, he smiled as he showed us the wonderful fresh raspberries and blueberries, that had been flown in from New Zealand, plus fresh cheeses. Fresh Herbs He pointed out fresh herbs are readily available And we can always get marvelous fresh pasta happen to be too busy to Combine sour cream with mayonnaise, lemon juice, onion, parsley, curry powder, mustards, paprika, pepper, salt ai.J Tabasco. Mix thoroughly; refrigerate. Chicken Mixture er 2 pounds chicken boned and cubed breasts, tablespoons peanut oil 1 cup plain yogurt 1 cup chicken broth (stock) 34 cup Curry Sauce (recipe above) 1 tablespoon curry powder lj cup pinenuts li cup currants 3 medium apples, cut in I to 2 wedges deli-groce- Saute chicken in peanut oil until cooked. Add yogurt, broth, Curry Sauce, curry powder and 1 apple cut in wedges. Simmer until sauce thickens. ("This may necessitate adding a flour roux.) Add pinenuts, currants and remaining apples. Cook two to three minutes before serving. Delicious served hot or cold. Colby A. Smith, bom in Santa Monica, Calif, but reared in Salt Lake City, is attending Columbia University where he is working on his doctorate in philosophy. He has a bachelors degree in political science from the University of Utah and also a masters degree in philosophy from that school. His wife. Holly, native Salt Laker, is employed by the National Council of Jewish Women where she does policy analysis and program development. She has a bachelors degree in political science from the U. of U. and a master's in social work from Hunter College, New York. Shes More Practical "Holly forces me to be more practical and I force her to be more philosophical, Mr. Smith laughed. So it is with their cooking. Her recipes most often are short, concise. His, long, detailed. But together they make beautiful music in the kitchen. "We both love to cook. And we always cook together," Mrs. Smith smiled. I started cooking with my mother when I was very young, making cookies and sweet breads, then going into the more difficult dishes. But it wasn't until I was in college that I started preparing meals. And Colby has always been very good at dabbling with recipes, she said proudly. "Like most New Yorkers, we dont have a car, Mr. Smith pointed out. "I need to use up the plums I bottled last year and Folitina thought it would be a good idea to use them in a cake." Mrs. Lisa Wood is requesting recipes for Pizza Sauce. chocolate-cRecipes for overed cherries are on the wanted list being requested by Mrs. Blatmck Mrs Laura Wang, Layton, is hoping to receive recipes for Seasoned Salad Croutons and Buttermilk Salad Dressing. Recipes for sugarless candy, specifically Carrot Candy are being requested by Mrs. Dora Newman. Mrs. D. Lambert, Cedar City, is requesting recipes for Rye Bread. There are many wonderful opportunities there, with an endless list of fine lectures available plus museums, art galleries, etc." Mrs. Smith said their cooking in the East is somewhat different than it was when they were living here. When we were in Salt Lake, we would make out a menu, then make a grocery list. In New York, we go to our favorite deli to see what they have that looks terrific, then decide what to cook. On Annual Trip On their annual trip to this valley city to visit with their two families and friends, these culinary artists make it a point to cook up a storm. Colby always cooks Christmas Eve dinner for his family, then we usually have a dinner party or two during the week between the holidays. "On New Year's Day we traditionally have a brunch for family and friends, Mrs. Smith commented. "Because we love working in the kitchen together, this special occasion is one we like to make memorable. The following recipes will make tasty memories for guests of Holly and Colby Smith today as this dynamite-duo wish their family and friends Happy New Year most deliciously. Sesame Pasta Salad (Colby and Holly Sloan Smith) ft pound pasta (recipe be- low) 1 diced sueel pepper 4 (We Smith in Salt Lake for holiday visit. They toted specialties from N.Y. for the menu. prefer yellow or red.) $ Prepare pastry; roll out and place in one large quiche dish or two pie plates; prick liberally. Brush with egg white. Bake at 400 degrees eight to 10 minutes. Saute cubed chicken in peanut oil; add prosciutto. Spoon into partially baked pastry. Curry Sauce cup dairy sour cream or plain yogurt h cup mayonnaise Juice of 1 lemon 1 minced green onion 2 tablespoons minced pars- 1 Dressing Fresh grated Parmesan, cheese fettuc-cin- e may be used). Cook al dente; drain. Toss with diced sweet pepper, mixed vegetables and Dressing. Serve with fresh Parmesan cheese sprinkled on top. Dressing 4 cup sesame oil tablespoons chopped fresh sage Chicken Cunry Mixed vegetables as desired such as snow peas and cut broccoli, blanched Prepare pasta (purchased Chopped fresh pdrsley 3 to 4 In large bowl combine eggs, egg yolk, half and half, heavy cream, nutmeg, pepper and salt. Beat until thoroughly combined. Add cheeses. Fill quiche dish or pie pans full with custard mixture. Top with paprika, parsley and fresh sage (may be added to custard mixture, if desired). Bake at 350 degrees for 50 to 60 minutes or until knife comes out clean when tested. Serves 10. ley three-quarte- 2 tablespoons curry powder h teaspoon Dijon mustard h teasprr.n Chalif mustard 4 teaspoon paprika Freshly ground pepper, salt and Tabasco sauce to taste tablespoons soy sauce teaspoons brown sugar i teaspoon pepper 1 tablespoon grated Parmesan cheese Clove of garlic, minced, or 2 teaspoons pesto h cup toasted sesame seed 3 rs 4 Blend thoroughly the sesame oil, soy sauce, brown sugar, pepper, 1 tablespoon grated Parmesan cheese, garlic and toasted sesame seed. Toss lightly with pasta mixture Sprinkle generously with Parmesan cheese. 0 V Fettuccine (Homemade Pasta) 3 cups pasta flour (durum or semolina) 3 extra-larg- e eggs teaspoon salt 2 teaspoons olive oil Hot tap water as needed 1 7 -- s. i p nn ip lYTY M C In a bowl measure flour, make a well in the flour Place eggs, salt and olive oil in well. Slowly mix flour into the egg mixture. Add enough water to draw all the flour into a ball of dough. Knead until stiff and rather dry. Rest 10 minutes with dough covered. Separate dough into thirds. Set two of the thirds aside, covered. Knead the other third by passing it through pasta machine rollers until dry (10 to 15 times). Roll to desired thickness and cut as desired Repeat for remaining dough.
