After analysis of 100 zucchini pineapple samples, it was found that five percent had unacceptable and dangerous acid levels. It is vitally important that the zucchini be cooked in the acid (pineapple and lemon juice) before filling the jars in order to ensure that the acid has penetrated into the zucchini to reach the proper acid level.
