Many people, especially elderly like bread, folks, prefer something less dessert-oriente- d muffins or bisquits. Simplicity is a key when baking for others. Use basic recipes that are low in sugar and spices. It is hard to predict individual tastes especially if with the people you are you are not treating. If you stick to simple recipes for your bake and take project you can involve all the children in your family. Even the youngest can feel the reward of sharing talents and abundance with others. RECIPES using baking powder are easy to follow and ideal when you are working with inexperienced cooks. A master biscuit recipe can be adapted to create many tasty biscuits. 4-- H DONUTS Donuts always hit the spot, which makes them a childs delight. These are favoas seven-mont- h rites of the Preston family. POTATO doughnuts are extra light and delicious and will disappear quickly if left out on the kitchen counter. They are a nice treat to share with a neighbor or friend, Tami says. Doughnut boys are a tradition in Tamis family, her grandmother Harris always made them for each of the children when doughnuts were made and the boys grandmother, Gloria Hess also speaks for these delicious doughnuts. Gloria Hess of Farmington always made them for Tami and the brothers and sisters as they grew up. TAMI ALSO shares a lasagne recipe which her family often enjoys, nutritious and tasty with ground beef, and several types of cheese, most any family will enjoy this dish. POTATO DOUGHNUTS 3 yeast cakes dissolved in V2 cup warm water with 2 tsp. sugar V cup shortening ' cup sugar 2 tsp. salt cup mashed potatoes 2 eggs, beaten 6 cups flour CREAM shortening, sugar and salt together. Add potatoes and well beaten eggs. Add the yeast mixture and stir in the flour, a little at a time, mixing well. Dough will be a bit sticky. Cover and let rise until double in bulk. Roll out on floured board or pastry cloth and cut with doughnut cutter. Place on floured boards or 1 cookie sheets to rise. FRY IN hot vegetable oil or Crisco, turn once to brown and while still warm, glaze with a mixture of powdered sugar moistened with boiling water and a tsp. of vanilla. To make the doughnut boys, cut 2 circles with a small glass, for head and body. Shape arms and legs from the doughnut holes and connect to body. Make these boys last and then fry first as they are difficult to handle if they become too light. THE DOUGHNUTS freeze well and can be warmed quickly at meal time or for snacks. ; er 1 tsp. salt 6 tsp. baking powder 1 'A cups milk 1 Tablespoon melted shortening SIFT DRY ingredients together; add melted shortening and milk to make soft dough. Knead on floured board; shape into rolls. Put into greased pans and allow to stand in warm place 20 minutes. Bake in hot oven (475) 15 to 20 minutes. Makes 12 rolls. Individual coffee cakes are attractive. By using bak- ing powder, they can be made by inexperienced bakers. INDIVIDUAL COFFEE CAKES 2 cups flour 3A Make as for whole wheat biscuit, adding one more cup chopped pecan or walTablespoon sugar, one-hanut meats to dry ingredients and put a pinch of chopped nuts on top of each before baking. lf FRUIT BISCUIT Make as for whole wheat biscuit, adding one more cup chopped dates or Tablespoon sugar and one-haraisins to dry ingredients. lf GOLDEN TEA BISCUIT Follow Master Recipe, using three teaspoons baking powder instead of four and adding one Tablespoon sugar to the dry ingredients. Mix one egg with V2 cup water and use for liquid instead of milk. tsp. salt 4 Tablespoons sugar 3 tsp. baking powder 4 Tablespoons shortening 1 egg V2 cup milk SIFT DRY ingredients together; mix in shortening; add beaten egg to milk and add to dry ingredients to make soft dough; divide dough into six long, narrow pieces; with hands roll each piece on board until long and thin; spread with butter; cut each in two and beginning in center twist two pieces together and bring engs around to form crescent. Put into greased pan; sprinkle with chopped nuts. Bake in hot oven (450) 0 minutes. While hot, brush over with thin icing made from V2 cup confectioners sugar moistened with 1 Tablespoon hot water and a little vanilla. 15-2- z. 12-o- z. j 10-o- z. WHOLE WHEAT OR GRAHAM BISCUIT Take one cup whole wheat or graham flour and one cup white flour, one Tablespoon granulated or brown sugar and proceed exactly as in the master recipe, baking about 14 minutes. RYE ROLLS LASAGNE lb. lean ground beef 1 onion, chopped 2 cloves garlic, minced 2'A cups whole tomatoes V2 tsp. oregano 1 can tomato paste 1 carton cottage cheese 2 to 3 cups grated Cheddar, Swiss or mozzarella cheese 1 pkg. lasagne noodles BROWN GROUND beef with chopped onion and garlic. Season with salt and pepper. Drain off fat. Add tomatoes, oregano and tomato paste. Simmer for 15 to 20 minutes, until the tomatoes have cooked down a bit. Cook lasagne noodles according to directions on package, drain and separate so they do not stick together. Now layer the sauce, noodles and cheeses, in two layers in a large casserole, about 9x13 inches. Bake at 350 degrees for 30 minutes. Serves 8 to 10. Roll to 13 inch thickness and bake about 15 minutes.
