After school children want something to eat. Mom doesnt like to spoil supper. At a party, dishes of munching food set out are useful. They keep the guests entertained while waiting for everyone to arrive. Conversations move smoothly between guests if the munching foods are delicious and conveniently placed. USUALLY SMALL dishes filled with nuts, small candies and miniature cookies are provided for munching. Occasionally ,' an innovative hostess or mother provides originally, basically nutritious foods. The nutritional quality of most fruit, nut and vegetable snacks is often balanced out by coating the food with some form of sugar. The result is tasty and enjoyable even if the food value is questionable. ' ROASTED ALMONDS lVi pound blanched alrtionds Vi cup butter or margarine Vi cup soy sauce PREHEAT oven to 375 degrees. Place the almonds in a baking pan and spread them out evenly. Bake in oven for 15 minutes, stirring two or three times. Pour soy sauce over the almonds and stir well. Add butter or margarine. Stir well. Return the almonds to the oven and bake for another 12 to 15 minutes or until they are. coated with soy sauce and just about dry. Stir them every 3 minutes during this second baking process. Cool. Store in a covered Peel off the top sheet of waxed paper. Cut into l'2x3'2 inch pieces. Press the shredded coconut into all surfaces of the candy bars. Wrap each small bar in a plastic wrap and store in a covered container. CANDIED vegetables use sugar. They are different in texture, appearance and taste. MIXED FRUIT CANDY BALLS cup raisins cup pitted dates Vi cup figs Vi cup pitted prunes Vi cup chopped nuts 1 orange, peeled 13 cup wheat germ Vi tsp. cinnamon V cup sesame seeds Vi cup almonds, sliced PREHEAT OVEN to 350 degrees. Put sliced almonds in one baking pan, the sesame seeds in another and the raw wheat germ in the third. If your wheat germ is toasted, dont repeat the process. Bake until the nuts, Vi Vi seeds and wheat germ are light brown (10 minutes), Remove from oven and. cool. - Chop raisins, figs, dates, prunes and orange slices into very tiny pieces. Ifyou have a blender, use this. Put finely chopped ingredients in a large mixing bowl and add the toasted wheat germ and cinnamon. Mix. With your hands, shape into 36 tightly packed candy balls. Roll half of the balls in the sesame seeds and half of them in the toasted almonds. Refrigerate until you serve them. FRUIT BARS are another blender food. Notice these recipes do not use commercial sugar. FRUIT BARS pound figs or pitted dates 2 cups finely chopped or ground almonds or walnuts 13 cup shredded unsweetened coconut Vi cup raisins 1 CANDIED VEGETABLES enough vegetable slices to make 1 cup sugar V2 cup water 3 cups PUT SUGAR and water in a saucepan and cook to the boiling point. T urn down the heat and cook gently for 1 5 minutes. Add the vegetable slices to the syrup and cook an additional 15 minutes or until tender. Lift slices out of the syrup with a slotted spoon and dry on a wire rack with a piece of waxed paper underneath to catch the drippings. After the vegetable slices have dried for several hours, roll them in more sugar. Place back on the rack to dry thoroughly. John Waynes Casserole, Treat At The Orisons By KATHRYN JENNINGS Time for lunch and around the table are Rick, dad Randy Orison, holding Kiley, Scott, mom Shauna, Chad and Emily. ALL ARE looking forward to the crisp green salad with a special celery and poppy seed dressing and then the main dish, a custardy cheesy casserole, named after the famous western actor. The casserole contains several types of cheese, eggs and other ingredients for flavors. The egg whites are beaten stiff and folded into the mixture, for a delicious type of luncheon or dinner meal, nutritious with plenty of proteins. Tomatoes are sliced over the top after partial baking, then baked until tomatoes are broiled, a colorful dish. PREHEAT oven to 325 degrees. Remove seeds from chiles. Now combine the cheeses and chilis in a greased 9x13 inch casserole, which is well greased. Beat the egg whites until peaks form. Meantime, mix the yolks, milk, flour, salt and pepper together and fold this mixture into the beaten egg whites. POUR OVER the cheese and chiles in the casserole and with a fork, cut through the mixture. Bake for about 20 minutes at the 325 degrees, re- move from oven and place tomato slices on top and bake another 20 to 30 minutes, until done. This serves about 12 to 15. JOHN WAYNES CASSEROLE 2 4 oz. cans green chiles, diced and drained 1 lb. jack cheese, grated 1 lb. Cheddar cheese, grated 4 egg whites, beaten stiff 4 egg yolks, beaten 23 cup canned milk. 1 Tbsp. flour Vi tsp. flour Vi tsp. salt y tsp. pepper or 3 sliced tomatoes. 2 2 1 1 cup sugar tsp. salt Tbsp. celery seed medium onion, chopped fine 2 1 1 cup vinegar Tbsp. prepared mustard Tbsp. poppy seed pint salad oil MIX ALL ingredients in the blender for 10 minutes. If the dressing needs thinning, add a little cold water. Serve over a butter leaf lettuce. 1 chopped orange and 1 or 2 sliced avocados. Or any other combination of greens which the family en- joys. This is a favorite salad of this family, adults and children. WE ARE newcomers to Farmington our family," Shauna con- tinued. Both Randy and Shauna attended BYU and then Randy attended the University of Utah to obtain his MBA.
