There is a deli- cious vegetable dip with crips veg- gies for guests to enjoy, THE PUFFED rice balls are a nice light confection and the tuna loaf is topped with thin slices of lemon, making an attractive loaf. Cheddar cheese is used in the loaf making a nice zippy entree for family or guests. Danell also shares a chicken and rice casserole which bakes for two hours, blending flavors and is easy to prepare. An unusual jello salad is also given, good to serve with almost any meal. This is not a set salad, but the jello is used as it comes from the package, added to cottage cheese, pineapple and cool whip, with other ingredients. FRESH RHUBARB PIE Pastry for a 2 crust pie 13 cups sugar 13 cup flour ' tsp. salt 4 cups rhubarb cut into ': inch pieces 1 2 Tbsp. butter COMBINE sugar, flour, salt. Add to the rhubarb. Place the rhubarb into a pastry lined 9 inch pie tin and dot with the butter. Adjust the top crust over the rhubarb. Flute the edge to form a high standing rim; also cut some vents in top crust. cream. Bring to a boil and reduce heat to low and cook for ten minutes. Remove from heat. Add the gelatin to the hot rhubarb and stir to dissolve. Mash the cream cheese and add to the hot mixture and stir until dissolved. Chill until it starts to thicken. Whip until light and fluffy, add the lemon juice, celery and nuts. Turn into a salad mold and chill until set. This salad is rich and the servings need not be large. Serves 8.
