TAHITIAN When Mrs. Ed (Eleanor) Nauman called to offer a conversion formula for white flour to whole wheat flour in recipes, she didnt know that she would be featured in five-year-ol- Whats Cooking? And this writer didnt know shed strike the jackpot at the Nauman household, where Ed Nauman offered to share his experience in building a smoker and his brine recipe for preparing fish for smoking. Both items had been recent reader requests, so this week Eleanor will share her whole wheat recipes and next week Ed Nauman will be featured with ideas for smoking fish. A relative newcomer to Brigham City, Eleanor immediately became involved in the community and recently served as president of the Newcomers Club. She is now a member of the Brigham City Library Board. She is also a recent advocate of whole wheat products. After enjoying whole wheat bread made by a friend, she first tried commercial flour and found it just wasnt the same. A wheat grinder came next, along with a collection of recipes featuring her freshly ground wheat. As for converting those old favorite white flour recipes for use with whole wheat flour, Eleanor states that each one would really have to be tried out since other ingredients might have to be altered in amount. But her experience and wheat cookbooks suggest the following alteration: A' v . It has been fun and exciting both for the Nelsons and for the Tahiata family to meet one another and mix their cultures, so it will be a sad day when they kiss both cheeks in affectionate farewells next week. Combine molasses with lukewarm water; add to yeast mixture, stir well. 4. Stir about half the warmed flour into the mixture, beating well; add remaining flour alternately with last amount of lukewarm water, and add salt and wheat germ, mixing well. Dough will be sticky. 5. Butter large loaf pan well. Turn dough into pan no kneading; sprinkle with sesame seeds; leave to rise to more of its size. Preheat oven to 400 d degrees. 0 minutes or until done. Remove 6. He was delighted with the chance to show this native family some of the United States of America and also to be able to introduce his parents and family to these close Tahitian friends. After arrival in Los Angeles, he took them to the sights in that area including Disneyland and Marineland and then drove up through Utah and visited Bryce and Zion National Parks. The Tahiata family are members of the LDS Church, so the trip also included visits to the LDS temples in Los Angeles, St. George and Manti and they have visited Temple Square in Salt Lake City while staying in Brigham City. Father Haavi Tahiata reports that he is a Mormon, and Riley Nelson added the interesting note that Tubuai was the first place that Mormon missionaries went outside the United States. Another favorite family treat is poe, a hard pudding made of bananas and manioc starch.
