Show Brigham City, Utah 84302, Thursday Morning, September 5, 1974 Volume 67, Number 36 Businessman named marshal something the nosebag' A veteran City Brigham businessman who has watched many Peach Days celebrations come and go has been selected by the 1974 parade committee as this years parade marshal. He is Perc Knudson, an owner and founder of the Idle Isle cafe in downtown Brigham City. Mr. Knudson has had a great deal to do with nearly every worthwhile project that has been initiated in this community during the past 50 years, a spokesman said. He has been a civic leader of rare insight and dedication, one who is not afraid of any challenge and who has an uncommon degree of common sense. Knudson began his long business career on Main street on May 7, 1921 with the opening of the Idle Isle. He remembers that there were five or six restaurants in downtown Brigham at the time and recalls that he soon learned that you had to have something in the nosebag to This old Danish hardheadedness, the more they told him he couldnt the more he buckled down to do it anyway. The hours were long and irregular. As Perc said, We knew how much we needed to take in each day and we stayed open until we had it. The early days in the business found them in the middle of the depression but they persevered. The restaurant became a family business with the children helping as soon as they were old enough to wash dishes. Knudsons wife, Vera, recalls that everyone told them they couldnt make it.
