Mrs. Hansen is a gracious hostess. With a husband and six healthy children you know without asking that she is a good cook-an- d she is ! When asked if it was a problem to cook in large quantities Mrs. Hansen, the former Mae Mason, see I was one assured me, Its no problem at in a family of nine children. I helped mother with the cooking (with my parents there were 1 1 to cook for) so I have always been used to cooking for a large family. My mom is a fantastic cook, Mae went on, shes a plain cook, but everything always seemed to turn out just perfect. I guess we inherited our love of cooking from my grandmother who was originally from Virginia. After coming to Utah my grandparents owned and operated restaurants in both St. George and Ogden. Cook until a soft ball can be formed in cold water. Set aside to cool. When cool, beat until creamy, knead, use butter on hands. Flavor as desired, (vanilla, peppermint, etc.) Add walnuts, candied cherries, etc. Color as desired. Fondant may be made from the above recipe by substituting water for milk and omitting butter. When I was about 16, mother was away most of the summer caring for grandmother who was ill and it fell to me to do the cooking for our family. I remember threatening my Dad if he brought home one more chicken or turkey! Being a farmer's daughter during harvest time we also had hired men to cook for. Mae was born in Ogden. She spent her girlhood in Fielding. She was a graduate of Bear River High school and LDS seminary and attended Utah State University in Logan. Ive taken lots of classes from Weber State college, she told me, in cooking, sewing, shorthand, painting, etc. She especially likes to experiment with new recipes-s- he delights in changing them to fit her own taste. Some the family like-sothey dont. She recalls her saying, Mom, why dont you ever cook normal? Shes always had a special hobby of s and is forever asking for recipes collecting when she attends parties, etc. and tastes something which appeals to her. Her husband is employed at the Defense Depot in Ogden.
