Made in an electric fry pan for convenience and easy serving, the beef stroganoff ha a savory tomato sauce with the special emoothneae and yummy flavor imparted by sour cream. Flavorful Beef Strogsnoff Can Ba Prepared, Served Conveniently in Electric Fry Pan Bite-siz- e chunks of beef and buttery sliced mushrooms are sauced with a smooth combination of tomato puree, sour cream, and superb seasonings to make this flavorful version of beef stroganoff. This recipe was developed specifically for use in the electric fry pan since that appliance is becoming so popular with homemakers. The beef stroganoff can be served in the fry pan. with a pretty combination of rice and peas piled lightly around as a border. The sauce is made right in the fry pan with the meat cubes and mushrooms and the use of rich sour cream insures its smoothness. The beef is inexpensive round steak glorified in this dish to company elegance. BEEF STROGANOFF 2 pounds round steak thick, pounded 3 tablespoons flour 3 tablespoons butter 1 can sliced mushroom (4 ounces) cup chopped onion teaspoon garlic salt 1 teaspoon salt 1 can tomato puree (10V4 ounces) Mushroom liquid plus water to make H cup 2 tablespoons flour 1 cups sour cream M teaspoon Tabasco sauce 1 tablespoon Worcestershire sauce Trim any fat or connective tissue off meat and cut in inch cubes. Dredge meat in the 3 tablespoons flour. Meanwhile heat electric fry pan to 340 F and melt butter. Add meat cubes and brown on all sides, stirring frequently. Drain mushrooms, saving liquid. Add onion, garlic salt, salt and the drained mushrooms to meat in fry pan and cook until onion is yellow and transparent Stir in tomato puree and mushroom liquid. Reduce heat to 220 F, cover and simmer until meat is tender (about 2 hours), stirring occasionally. Blend In the 2 tablespoons flour and stir to form a smooth paste. Increase heat to 240 F. Add sour cream and sauces, stirring all the while to keep smooth and well blended. Cook uncovered about 5 minutes or until mixture is thickened, stirring occasionally. Serve with Hot Rice and Peas. Makes 6 to 8 servings. Note: If sauce becomes too thick, a small amount of hot water may be stirred in.
