Show 22 HILL TOP TIMES Friday, Novmbf 9, 1984 si eOeeftiiifiigj Jurkey reyoires If you choose carefully, your traditional holiday turkey can be more than a great feast. It can also be nutritious and a, good buy. Turkey is an ideal food for most of us, even those on diets, because it's relatively low in cholesterol and fat. When a turkey is roasted, much of that fat drains off. The white meat is especially low in fat and calories. Frozen, plain turkey is usually the most economg ical and nutritious. In contrast, frozen, turkeys contain injections of a solution of broth and butter or cooking oil. The basting oil adds calories, and the broth is often high in salt (sodium chloride). . low-calor- ie self-bastin- v The holiday season is a great time to get together with relatives and friends, but you may not realize that such gatherings are actually beneficial to your heart. Recent scientific evidence suggests that people who have close friends and family ties, or those who belong to social and religious groups may be less prone to heart disease and other illnesses than people who are loners. "Relationships with other people have important consequences for health,'' S. Leonard Syme, Ph.D., professor at the University if of California School of Public Health, Berkeley, said at a recent American Heart Association conference. His research team's efforts are directed at preventing heart disease. The problem with prevention is that the known risk factors high levels of cholesterol in the blood, high blood pressure, and smokingwhile important, leave many cases of heart disease unexplained, Dr. Syme said. Only 10 percent of men with two or more of the risk factors periactually develop heart disease over a od, he pointed out. Other factors must also be im10-ye- Another drawback; the basting fluid makes the turkey weigh more and thus cost more. You must pay for the basting fluid at the same rate as the turkey meat. g If you want a turkey, avoid the ones oils with injected containing saturated fats, such as those found in butter and palm and coconut oils. Eating saturated fats tends to raise the level of g cholesterol in the blood. Choose turkeys that contain unsaturated vegetable oils such as corn, cottonseed or safflower. Read the label. You will also want to read the label if you are ing a prestuffed turkey, to find out how much salt self-bastin- self-bastin- one's health caffffecf Gelofiomships dlstaol if1ieini'iiiiini people chosen at random from Alameda County, Calif. The scientists found that those who were classified as socially isolated had death rates two to three times higher than those who were more social- ly involved independent of other factors such as age, sex, diet, smoking, obesity, "social class and ' medical care. The idea that social isolation somehow lowers a person's resistance to diease may help explain several findings made by other scientists over the past 10 years or so. Rates of disease are known to be higher among people who change jobs and move from one community to another. Another finding is that divorced, widowed and single people have higher disease rates than married people (AFNS) well-establish- ed ' ar ' ; portant. Dr. Syme and his have spent more than a decade searching for the other factors. To shed more light on the importance of maintaining family and social ties, the researchers studied 7,000 co-work- and other ingredients are in the stuffing. Never thaw a prestuffed turkey. Put in the oven still frozen and cook as directed. It will take longer, but it's much safer. Bacteria love a warm, moist environment and will thrive in an uncooked, prestuffed turkey if it is thawed. With a plain turkey, fresh or frozen, you can control what goes into the basting fluid and the stuffing. You can baste the turkey in its own juices, and thus avoid unnecessary fat, cholesterol and salt. Turkey leftovers can be made into many delicious dishes, including turkey salad and curried turkey with water chestnuts. Of course, there's nothing better for lunch than a cold turkey sandwich. When we consider cost per serving, taste, and the good nutrients turkey provides it's easy to see why turkey is a highlight of holiday dinners.
