UCCU begins building PG office Utah Community Credit Union broke ground recently for its new facility which is now under construction in Pleasant Grove. The new building will, be located at the comer of 100 East and State Street, just south of the Purple Turtle. The building will be one level and will look similar to the building recently completed in Spanish Fork. At the ground breaking ceremony council member Carol Harmer spoke for a few minutes and said how thrilled the city was to have the Credit Union come to the city. Community Services director Frank Mills also spoke briefly some of the different businesses busi-nesses that have used that corner of the city, most notably a tavern that used to be there many years ago. Construction on the new office is expected to take about nine months, the new office opening sometime in, July of next year. UCCU recently changed its field of membership to allow any person who lives in Utah County to open an account at the credit union. In response to the change in membership and continued growth, UCCU is expanding throughout the county. The Pleasant Grove office will be the seventh UCCU branch and will help the credit union better, serve their 70,000 members. By Julie A. Bellon Four weeks ago the Escobedo family of Lindon opened the Las Jaibas Restaurant in Pleasant Grove. The restaurant is located in the Smith's shopping shop-ping plaza, next to Get in the Game. It is a true Mexican restaurant not only in food, but also in decorations and the television programs playing while you eat. The restaurant does offer authentic Mexican food and drink, including seafood and low fat choices. Since Mexico boasts many coastlines, seafood is a favorite among the natives and the Escobedos know how to prepare it in a true Mexican fashion. A sample of the food proves their point it truly is like nothing you've ever tasted. I tried the chicken enchilada and the flan, which, after one bite, I knew this food was different.
