Emily Marlowe NORTH COUNTY STAFF If you were to take one look at my thighs you would know that I am a bread lover, white, wheat, sourdough, garlic, you name it I love it. The smell of bread baking is a memory that most of us can relate with. I know that many times after school I could walk through the back door and know that mom was baking bread. I have tried to pass this memory on to our children by surprising them once in a while with a loaf of homemade home-made bread. Now that school is starting again, I know that a warm slice of bread after school is a better treat than a brownie. So, I will be reprogramming my mind to school days instead of hot summer afternoons. af-ternoons. This means more bread and less treats in our home (only be request of our children and not my thighs!) My husband will be arriving arriv-ing home from work just a bit earlier for his fair share of bread. He knows if he waits too long there will be none left for him. The easiest way to make homemade bread is practice, practice and practice. My cooking class this month is on bread and practice is the best advice I can give my students. stu-dents. Don't get discouraged. It takes only a couple of tries until you have bakery -tasting bread. Let me give you a few hints this week that will help you to realize it is not as hard as it tastes, and a recipe that a first timer or novice bread maker will love. Mom's Honey Wheat Bread Proof 2-12 cups warm water 2 Tablespoons yeast Pinch of sugar Add to: 14 cup oil 12 cup honey 3 cups whole-wheat flour Mix together well. Add: 4-5 cups white flour 1 tablespoon salt Mix well. Raise for 1 hour Shape into loaf size and place in greased bread pans. Let rise until almost to the top of the pan. (Cover dough while raising with a greased piece of plastic wrap.) Bake on 375 degrees for 25 minutes. Tips for bread making: Use good yeast. Active dry yeast is the most common yeast. When "proofing" (checking to make sure your yeast is good ) your yeast, use water that is 105 -1 15 degrees de-grees and a pinch of sugar and let stand until creamy and bubbly, usually 10 minutes. If your yeast does not become bubbly, throw it out. Your yeast has gone bad. Store opened yeast in the fridge. I If your bread looks done on the outside and you cut into a gooey center, try checking the temperature of your oven. An oven thermometer is inexpensive and can test the accuracy of your oven. If this is not a problem, try putting a loose tent of foil over the top of the bread so it won't burn before the middle has a chance to catch up. GOING ON VACATION!
