The wide variety of foods available today is counted as one of our country's greatest blessings. But with so many different types of foods, ingredients and processing methods, the diversity has brought confusion, too. The foodstore dairy case is an example. Despite the name, not everything sold there is a dairy product (and that doesn't mean just refrigerated biscuits, either). And, did you know that not every real dairy product is sold in the dairy case? To learn which ones are not and other facts about foods, take the quiz below. It will help you assess your shopping savvy and maybe will make you a better informed purchaser, pur-chaser, especially of dairy products. 1 WViinK tf tha -following are real dairy. products: a. cheese, b. ice milk, c. milk, d. half and half, e. sour cream. If you said, "All of the above," you're right. Being made from 'milk' is what makes a dairy product a dairy product. 2. True or False: Exact standards are set by the government for the composition, ingredients and preparation methods of real dairy foods. True. Called "standards of identity," they are established by the Food and Drue Ad- " ministration and some state government agencies to assure uniformity, value and wholesomeness of all milk and real dairy foods. Standards regulate such characteristics as' milkfat and moisture content of cheese and weight per gallon of ice cream. 3. Now a little harder question. Which of 'these' are real dairy products: a. Pasteurized process cheese, b. Nonfat dry milk, c. Sweetened condensed milk, d. Evaporated milk, e. Sour half and half. Watching our Utah State Legislature at work almost takes one's breath away. It's truly impressive. Farmers and factory workers, housewives and businessmen, educators, and attorneys gather together for a few weeks each year with the all consuming desire to bury their fellow citizens under an avalanche of new legislation. In spite of low pay, limited staff support and only twenty working days, our elected officials somehow find the time to regulate almost everyone. Taxpayers were hit with almost $18 million in tax and fee increases. Newspapers, truckers, hunters, liquor distributors, those on unemployment, and school children found themselves the target of new legislation.- Each year someone suggests that the limited sessions held in Utah allow far too little time for proper governing. I'm beginning to wonderf It seems they have plenty of time to harrass the newspaper industry. In fact the only group that escapes from regulation because of limited time arguments is the legislature itself. Members of the State Senate and House of Representatives can move from one district to anothe without losing their seat. They can accept campaign contributions from special interest groups in unlimited amounts with no penalty for failing to inform the voters as to the source of campaign financing. They can conduct private business on the floor of the legislature, while the body is in session. They can earn income as paid lobbyists for special interest groups directly impacted im-pacted by the very legislation that they are considering con-sidering while supposedly acting as representatives of the people of their district. The time for a strict code of ethics for members of the State Legislature is long past. When they ask for your support in the next campaign, commit them to implementing regulations that will protect 'all' the people. The taxpayers of the state deserve legislative reform. the dairy case. This is because they are all made" from milk, not vegetable fat or vegetable protein. Pasteurized process cheese is natural cheese that has been ground, melted and pasteurized by high temperatures, with emulsifiers added to prevent separation of milkfat. Often other food ingredients, are included for flavor and texture, for example, vinegar, salt and spices. Nonfat dry milk is simply skim milk with all the water removed. It can be used "as is," in cooking, or reconstituted, in exactly the same ways you use skim milk. Evaporated and sweetened condensed milks are fluid milk with 60 percent of its water removed; to prevent spoilage, evaporated milk is sterilized and sweetened condensed milk has a sweetener, such as sucrose, added. Sour half and half is like sour cream, but contains 10.5 to 18 percent milkfat as compared to sour cream's 18 percent or more. Getting the idea? Now try these: a. butter, b. eggs, c. margarine, d. frozen or powdered. whipped topping, e. frozen or powdered coffee whitener, f. aerosol whipped cream. The real dairy foods in this list are a. and f. Butter is made from milk. Aerosol whipped cream is cream that is aerated-which aerated-which means "to fill with gas," exactly the same thing that happens .when you whip cream by hand-as hand-as it passes through the can's nozzle. If the words "whipped cream" are on the label, then it's real. Eggs, obviously, come from chickens, not cows, so they are not dairy ' products even if they are found in the dairy case. Margarine is .made from vegetable oil, also a key ingredient in frozen and. powdered whipped toppings and coffee whiteners. These are .not real dairy products. The 'real' dairy products are butter, whipping cream and half and half. 5. How can I be sure I am buying a real dairy product: a. Read the ingredients list, b. Look for the 'Real' Seal. Both answers are correct. With real and imitation dairy foods packaged in look-alike containers, sometimes it's difficult to be sure what you are getting. The-fastest The-fastest and simplest way is too look for the 'Real' Seal. This symbol, a stylized drop of milk encircling the word 'Real,' can be displayed only on genuine dairy foods meeting federal and state standards. American Dairy Association assures that the contents of a package with the Seal are genuine dairy products. Some real dairy foods do not display the Seal. If you don't see it on the container, that doesn't mean there is not a real dairy food inside. Reading the ingredients list will tell you whether or not the contents are a dairy product. The base material of trhe product must be 100 percent milk or cream. Both the ingredients list and the 'Real' Seal help you know what you're buying before you buy it, so you can continue con-tinue to get the value you're paying for, which is the real goal of smart shoppers.
