The inner part of the wheat kernel called the endosperm, consists mostly of starch and a small amount of protein. It contains almost no vitamins or minerals. White flour is made from this part of the kernel, which is low in the nutrients upon which good health depends. The bran layers contain large amounts of vitamins, minerals (including iron to make good red blood and phosphorus for nerves and bones), and proteins of a very good quality. The embryo, or "wheat germ" is the life-giving part from which the wheat plant sprouts and is one of the richest known sources of B and E. vitamins. It also contains valuable protein and tat. This week, Castle Cookery, continues with the recipes, "Living Recipes" of Ella Edmunds. Her special home ground whole wheat flour is especially fine and soft. She suggests that if the whole wheat flour you are using isn't quite as fine, you may want to use some white flour with it and sift out the bran and granules to use in cereal. (Be sure not to throw the bran away or you'll be tossing out the most valuable parts of the wheat.) PECAN COOKIES 2 cups brown sugar 1 cup butter 2 eggs 2 tsp. vanilla 3" 4 cups whole wheat flour 2 cups pecans Cream butter and sugar. Beat in eggs. Add flour, one cup at a time. Mix in vanilla and pecans. Shape into logs (4) about two inches thick. Wrap in freezer foil or heavy plastic wrap. Freeze. Slice one-fourth inch thick while frozen. Bake at 375 degrees for 15 minutes. ' JOHN'S CHOCOLATE CAKE (John is one of Ella's sons. He can't eat eggs so this is his eggless cake. It's delicious! ) . In mixing bowl put: 2 cups cold water 2 Tb. vinegar U cup melted butter (cooking oil may be used) 2 cups brown sugar 1 4 tsp. salt 1 tsp. vanilla Do not stir, but add on top of 3 cups Ella Edmunds can put on a feast fit for a queen and today's column is a sample of all the goodies to be serv ed during the final course. Mix well with beater. Put in dripper pan. Bake at 350 degrees for 30-35 minutes. If you use a coarse whole wheat flour, you may want to sift some of the bran out or use half whole wheat und half white flour. For a spice cake, omit the chocolate and add ' cup of applesauce, plus 1 tsp. cinnamon, x i tsp. allspice, i tsp. cloves. Add raisins and nuts, too! WHOLE WHEAT CHIFFON CAKE In mixing bowl put: 1 cup water x cup cooking oil 5 egg yolks 2 tsp. vanilla Grated lemon rind or 1 tsp. lemon flavoring. Add and mix thoroughly: 1 1 cups raw or brown sugar 24 cups whole wheat flour (If you do not have a fine flour, sift some of the bran out or use half white.) 3 tsp. baking powder :,4 tsp. salt Whip until very stiff: 1 cup of egg white with -t tsp. cream of tarter. Add first mixture to egg whites. Fold in well. Bake in tube pan at 325 degrees for 1 hour and 5-10 minutes. Cool with pan upside down. This cake is delicious just plain or frost with 7-minute frosting using brown sugar. It also may be frosted with whipped cream. Add 1 tsp. of Knox Gelatin (which has been dissolved) when using whipping cream. Also cake can be layered and spread with favorite pudding mix. 1 r J?' For instance, in-stance, last week I misinformed you on the brand of cows that give all that rich cream. Istead of Holstein cows, they are Jersey cows. Also, the column with Gloria Murdock's recipe for caramels had an error in, procedure. Instead of adding the sugar mixture to the cream over a 45-minute period of time, it should be the other way around. Make a note on that recipe to add the cream to(' the sugar mixture. Springville matron to be nmety Saturday Maude Bunce will observe her 90th birthday Saturday, April 11 at her home on South Main in Springville. She has lived at her present address for about 30 years, having moved there from Moab, Utah, with her husband Irvin Bunce to be near a daughter and - son who were living in this area. Maude has been a widow for the past 19 years, and has lived alone. Her family lives nearby and is there to help, when she needs it, but she is a determinedly indepenent woman and seldom relys on anyone else for help. She has always enjoyed cooking, canning and baking goodies for her sons and grandchildren. She says her family has scolded ner tne past tew years about her doing any canning, but she still managed to get her pressure cooker out once or twice last summer. She firmly believes in having a year's supply, and resents wastefulness of any kind of food. Her bottled chicken and homemade noodles are a very special treat. She also makes delicious apple bread and raisin cookies. Maude has made quilts for all of her grandchildren, and pieced a quilt just last fall for her son's birthday. Until the last two or three years, her hands were always busy doing embroidery em-broidery work, when the rest of her housework was done. Her eyesight is not quite as sharp lately, and several severe illnesses Hafen-Dallin Club hears Vern Swanson The first meeting of the spring series of Hafen-Dallin Hafen-Dallin Club was held April 2nd at the Art Museum, Margaret President Welsh con-meeting. con-meeting. She the following ducted the introduced officers: vice president, Elaine Jackson; secretary and treasurer, Julie Berkhimer; board members, Nora Creer, Marguerite Condie; historians, Janet Bird and Marie Whiting; honorary board member, Rachel Stewart, daughter of John Hafen. Sherril Sandberg, assistant director of the Museum was introduced. She gave a brief discussion of the volunteer volun-teer program at the gallery and invited anyone interested to submit her name. This is a very vital part of the art program, she told the group. She introduced Director Vern Swanson, who told the ideas being incorporated in the April Show. He said, "Our exhibition this year is devoted to highlighting contemporary representational represent-ational art of a traditional approach." He pointed out that it was a return to the traditional with a high degree of technical sophistication. He also stated that Springville Art Movement is unique, in that it started at the grass roots. Most Museums hive their beginnings by large contributions from industrialists, in-dustrialists, kings, presidents or special endowments. He said that this is the largest art J have slowed her up a little, however she still keeps going every day. Mrs. Bunce has a memory that would put most of us to shame. She has been trhough many good times in her life, but she has also experienced some severe trials. Her early life was spent in remote areas of Utah, Idaho and Colorado. Her father, Joseph D. West made a living for his family by contracting various kinds of jobs such as road building, digging canals, cutting timber for the railroads or for mines. This made it necessary for the family to live in small, rural towns most of the time. During the summer, they' lived in tents much of the time. She savs their family worked hard, but they had some wonderful, happy times together, ' She and her husband spent most of their lives on cattle ranches. They lived for many years at Mountain Home out in Uintah County. During this time, she took care of the towns post office. It was a small building attached to their home by a porch, so she didn't have to stay in the office all the time. They lived in Heber for a short time, and later bought a ranch in Moab, where they stayed for 17 years. Her son, Winford, was mayor of Moab for quite a few years. Another son, Joseph "Bud" Bunce owns a Convalescent Center in Provo. There have been times when he has show in the state per number of paintings, sculpture and works of art. He quoted John Jiafen as saying that art is to make people better-that better-that it is - positive and uplifting. " ''tC" 1 ' Mr. Swanson pointed out the three paintings by Richard Lack, showing the technical excellence of each and yet the versatility ver-satility of the artist. Margaret Welsh welcomed a group of ladies from the Provo Womens Council. Refreshments were served from a beautifully decorated table. Sixty guests were in attendance. at-tendance. She always refuses, saying that she will never, get her strength back by letting someone else wait on her. She says, "I have to keep going." She and her husband made many trips to the Manti Temple, and in recent years, she has done a lot of work at the Provo Temple. She loves to read, but lately her eyes won't let her read as long as she would like to. She and Ervin were the parents of four children, the two boys mentioned above and two daughters. One daughter died at the age of six with diptheria, and the other, Nellie Allen, died in 1965.
