FRENCH ONION SOUP by Chef Dan Philpot The Basin's own baritone, Blaine Pierce had occasion to appreciate my French Onion Soup recently, and had to have the recipe. Blaine said, "If you've ever had a hard day and you're in need of some comfort food, this is it!" Ingredients: 4 large yellow onions, thinly sliced 12 gallon chicken stock (homemade or canned) 2 bay leaves 12 tsp ground thyme sea salt & pepper to taste (sea salt's my choice) Crouton Garnish: 6 thick slices sour dough bread 6 tbs Swiss cheese (or substitute substi-tute Parmesan cheese) Procedure: Combine all soup ingredients ingredi-ents in large pot and set aside. In saute pan, brown onions until carmelized (dark brown). Be careful not to let them burn. Add the onions to the pot and heat to boiling. Simmer on low-medium low-medium heat for 10 minutes. Dish into small crock pots or bowls. Crouton Garnish: Place sour dough slices on cookie sheet, top each with cheese. Bake in 350 degree oven about 20 minutes. Place 1 crouton crou-ton on top of each bowl of soup just before serving. Serves 6. French Onion Soup is a hearty first course. Add a chunky slice of your favorite favor-ite cheese and fresh fruit and you have a delicious meal on a briskly cold day. The 'classic' French Onion Soup recipe includes the addition addi-tion of dry red wine added to the soup base (that is, of course, optional). The local Vernal-Roosevelt Chapter joins with the Utah Music Teachers Association this year in celebrating fifty years with "Hats Off to UMTAT at its upcoming annual conference, confer-ence, Nov. 10-11 at Salt Lake Community College - Miller Campus in Sandy. Current state president Lynda Broadbent says this will be one of the best conferences yet, and will feature fea-ture Melody Bober, a nationally recognized composer and teacher. teach-er. Other conference presenters present-ers include Dr. Paul B. Stewart (Music Teachers National Association President), Dr. YuJane Yang, and Kevin Olson, among others. The conference has something some-thing to offer every music teacher, from technique and theory workshops to integrating integrat-ing technology in a studio. This year features a special spe-cial Thursday, Nov. 9 evening eve-ning performance with the Utah Symphony and Opera and violinist Sarah Chang at Abravanel Hall. Conference attendees will be able to purchase pur-chase specially discounted tickets tick-ets as the Utah Symphony and Opera joins with UMTA in honoring hon-oring its golden anniversary. The organization, which includes music teachers of all instruments and voice, owes its beginnings to a small group of Utah music teachers who searched for an organization to provide professional development devel-opment and regular contact with fellow music teachers. This small group of 41 teachers teach-ers formally joined the Music Teachers National Association in 1956. The Utah chapter has grown in prominence.
