Here Is a simple, delicious menu that Is made-to-order for homemakers with spring fever! Fish 'it' Chips Casserole Potato Chips Baked Carrots I Coffee Walnut Muffin Fruited Gelatin Dessert Salad The fish casserole, the carrots I and the dessert salad can be quickly quick-ly prepared right after breakfast. All you need to do, come dinner time, is to heat the oven to 375F., bake the casserole dish and the carrots, and, while they are in the oven, quickly mix the batter for the coffee walnut muffin loaf. Cover; bake in moderate oven, 375F., 45 minutes or until tender. Sprinkle with chopped fresh mint. Coffee Walnut Muffin Loaf Add Vi cup chopped walnuts to 1 package muffin mix. Instead of the liquid called for, add double-strength double-strength coffee and evaporated milk combined in equal proportions. Pour into greased pie pan. Bake In moderate mod-erate oven, 375F., about 20 minutes min-utes or until done. Cut In small wedges to serve. Fruited Gelatin -Dessert Salad 1 pkg. cherry 1 cup halved, flavored gelatin seeded grapes 2 cups water 1 banana, sliced 1 pkg. (3-oz.) cream cheese Dissolve gelatin In water as directed di-rected on package. Pour a thin layer Into mold. Chill until set. Form cream cheese into small balls; place in mold on set gelatin. Chill remaining gelatin until syrupy; fold in fruit. Spoon carefully care-fully Into mold over cheese balls. Chill until set. Unmold on water I cress. Serve with cream mayon- I nalse (half mayonnaise, half whipped whip-ped cream). Yield: 6 servings. |
