First she used it to make delicious Pineapple Velvet Pudding; then she filled her cream pitcher with evaporated milk to serve with steaming hot coffee. PINEAPPLE VELVET PUDDING (Makes 6 io 8 servings) 1 can (8-'2 ounces) crushed 1- cups (large can) undi- pineapple luied velvelized evapo- 1 tablespoon (1 envelope) rated milk unflavored gelatine 2 tablespoons lemon Juico 1 package (3-'A ounces) 2 tablespoons chopped vanilla pudding and pie toasted nuts iilling mix 1 cup angel food or other cake squares Drain pineapple syrup into cup measure; add enough water to make 1 cup. Combine gelatine, pudding mix, 1 cup evaporated milk and pineapple liquid in saucepan. Cook and stir over medium heat until mixture comes to a boil. -Cover and chill until mixture mounds from a spoon. Chill remaining remain-ing 23 cup evaporated milk in refrigerator tray until soft jce crystals form around edges (10 to 15 minutes). Whip until un-til stiff (about 1 minute). Add lemon juice; whip very stiff (about 2 minutes). Whip pudding until smooth; fold in crushed pineapple, nuts and whipped evaporated milk. Layer pudding and cake in 1--quart mold or bowl. Chill until firm, about 2 hours. Unmold; garnish with red maraschino cherries and whipped topping, if desired. 1 Advertisement |
