Show i VOICE OF THE PEOPLE By Salt Lake Lako Telegram Readers Margarine Tax Defended As Protection for Public Editor Telegram The question question question ques ques- tion of the so-called so discriminatory discriminatory discriminatory tax on margarine has become almost as important a subject as that of the Taft Hart Hart t-Hart- Icy ley law or any other major controversy controversy controversy con con- threatening our national na na- economy and we who are in the dairy industry are really wondering why It seems that It Is easy for newspapers and some people to togo togo togo go on the band wagon and set setup setup setup up a spectacular argument when the subject has a theme it literally literally literally liter liter- ally takes food out of the mouths of children It reminds me of the usual cry of near calamity if one cent is added to the price of a quart of milk the cry that it is taking food out of childrens children's children's childrens childrens children's chil chil- drens dren's mouths but nothing is usually said if the price of a pair of baby shoes is raised from to 5 I do not believe that the dairy industry has any fight to pick with the manufacture or sale of margarine if it this product is placed for fOl sale to the consumer I in the true truc light the product merits What the dairy industry industry indus indus- tI try objects to is to have margarine margarine margarine mar mar- garine particularly colored margarine margarine margarine mar mar- garine substitute butter on consumers consumers' consumers consumers' consumers consumers' con con- sumers' sumers tables without their knowledge Margarine certainly has its place in the American diet but it should be manufactured manufactured manufactured sold and consumed as such and not as a substitute for butter It seems to us in the dairy industry that the editorial staff who champions margarine should learn a little about the product There are two kinds of margarine margarine margarine mar mar- garine in general Oleomargarine Oleomargarine garine is manufactured from animal fat known as tallow or suet Margarine is generally termed a product manufactured from various kinds of vegetable oils such as coconut cottonseed soybean or corn oils The same kind of fat or suet which you cut off your T-bone T steak and generally throw throwaway away is used for oleomargarine The same vegetable oils which are manufactured manufactured manufactured manu manu- into margarine are also used for vegetable shortenings and also used to manufacture soap and many other products All are made by a crystallization process and some manufacturers add skim milk to the emulsified oils before crystallization but during the crystallization process very little little little lit lit- tle of the skim milk is retained in the margarine l res of margarine generally add vitamins and some use an artificial artificial artificial arti arti- butter flavor In other words worda you can take a piece of suet boil it it cool It slice it put it on bread sprinkle a little salton salt salton on it and eat cat it with a vitamin pill and you will have about the I same product as oleomargarine All fats like butter margarine I shortening etc contain about the same amount of calories but there is a great deal of difference difference difference differ differ- ence in the and nutritional value of each kind of ot fat which has resulted in many different opinions of various scientists It is well to remember that margarine is manufactured in only approximately a dozen plants in the United States and although they import a large quantity of ot coconut oil they do use a great amount of the byproducts byproducts byproducts by by- products from our American farms it cannot compare either in health-giving health wholesome food or in the great economic role that the great American dairy industry plays in our nations nation's economics which comprises two million dairy farms in the United States with its twenty million dairy cows supporting at least ten million people on these farms with an additional over one million persons employed in the many thousands of dairy plants throughout the country Milk and milk products are and always will be the worlds world's most wholesome most nourishing food and compared to other foods the cheapest The dairy cow is the mother of posterity Utah has no manufacturer of margarine but it has an important and fast growing dairy industry Denmark one of the greatest butter producing countries in inthe inthe inthe the world for economic reasons during the depression of the early thirties sold all their butter butter butter but but- ter to England and ate margarine margarine margarine mar mar- garine themselves It soon became became became be be- came evident it was an insufficient insufficient insufficient diet as their childrens children's eyes became infected and the country had to pass a law prohibiting prohibiting prohibiting pro pro- the sale of margarine without a definite percentage of butter mixed with it Again I say the tax on oleo is not so important although butter butter butter but but- ter pays a considerable tax The important part is that margarine margarine margarine mar mar- garine in any form will not be served to you as butter when you enjoy a good meal in a restaurant restaurant restaurant res res- res- res and think you are eating eating eating eat eat- ing butter Robert E.
