Show CAN FRUIT WITH OR WITHOUT SUGAR Families who have received their 25 pound per person allotment allot-ment of sugar for canning may not expect to receive more this season, but this need not dster anyone from putting up all available avail-able fruit since it may successfully success-fully be canned with little or no sugar at all, Francis J. Quinn, the Bingham War Price and Rationing Ration-ing board has reminded housewives house-wives in this area. On the subject . of sugarless home canning, the board member mem-ber quoted a United States Department De-partment of Agriculture bulletin as follows: "The usual wartime canning rule is to allow one pound of sugar to four quarts of finished fruit. A little sugar helps canned fruit hold color and flavor fla-vor but the sugar is not essential to keep the fruit from spoiling. If you have more fruit than sugar su-gar put up some fruit unsweetened, unsweet-ened, and sweeten to taste when you serve." O |
