Show ALL PURPOSE FLOUR All purpose or family flours may be used satisfactorily for all household house-hold cookery purposes. They are lower in protein than bread flours, but contain enough protein for making good yeast breads, yet not too much for good quick breads and cakes. In addition to protein enriched all-purpose flours contain con-tain generous amounts of essential B-vitamins and iron. Twenty-six states now require that these food values now require that these food values important to good health be added to all-purpose flour. A skillful cook selects a good enriched flour, gets acquainted acquaint-ed with its qualities and adjusts her handling of it so as to have uniformly successful baked products. |
