New guidelines for making jams and jellies Diane Reese, Home Economist With lugs of huge, red ripe California strawberries flooding our supermarkets, many Utahns are thinking once again of making homemade jams and jellies. They are wonderful treats and make great make-ahea- d gifts, but remember to protect your invested time in the kitchen by using only tested recipes and following directions carefully. Charlotte Brennand, Utah State University food science specialist, said if you want to make jams and jellies with reduced sugar, look for those specific recipes. Dont try to reduce the amount of sugar in a traditional recipe. Also, remember that researchers at the U.S Department of Agriculture recommend that all jams and jellies be put in standard jars with two piece lids and processed in boiling water canner. USDA tests have shown that using the open kettle method and scaling with paraffin increases the likelihood of moldy products. For specific guidelines, contact Diane Reese, Home Economist at the Sevier County Extension. We have just received new Home Canning Guides in our office. All the recipes in this book are USDA approved and it is an excellent resource. If you are interested in this book, it will be available at no charge for as long as the limited supply lasts.
