Show Dried Fruits Valuable Because of Minerals Ail of the dried fruits are useful to vary the menu and contribute valu able minerals and other elements needed by the body. Fresh fruits should of course be served also as often as possible, but they are not always available. Dates, figs, apricots, prunes, peaches, apples and raisins may all be used In desserts, cakes and breads. The bureau of home economics suggests this delicious gelatin gel-atin dessert made of dried apricots and served with whipped cream and a few chopped nuts sprinkled over the top. pound dried 2 tbs. gelatin apricots 1 cup sugar 3V cups cold water tsp. salt Wash the apricots and soak them overnight in three cups cold water. Cook the apricots for ten minutes In the water in which they were soaked and then drain. Soften the gelatin In one-half cup cold water and add with the sugar and salt to this hot apricot juice and stir until the gelatin gela-tin has dissolved, and set aside to chill. In the meantime cut the apricots apri-cots Into small pieces. When the gelatin mixture has partially set stir in the apricots, put In a cold place for three or four hours, until thoroughly thor-oughly set. Turn onto a plate and serve with whipped cream, and a few chopped nuts sprinkled over the top. If preferred the mixture may be molded In cups for Individual servings. |
