Head Start is a federally funded pre-scho- for Sessions run one-hal- f day three or four days a week. A hot lunch is provided daily. Transportation to and from the classroom is also provided. Hea'I SI art accepts children who will be four years old before Sep-tember l, 1984. Participants are from families with limited incomes. Ten percent of the total enrollment may also include children with handicaps or special needs, regardless of family income. Head Start emphasizes a strong parent involvement program. It contained 125 acres. The $4,000 purchase price was raised through tsi donations. It was owned by the Provo Local Council of Girl Scouts. t In I960 the National Girl Scout Council planned to have all the I councils in Utah consolidate to h form the Utah Girl Scout Council. On Jan. 5, 1961 the Utah Valley Council deeded Trefoil Ranch to the Utah Girl Scout Council. The first meeting of the newly formed property management committee was held April 10, 1980. Mrs. Hassenfritz is a member of that committee. One of the responsibilities of this committee is to prepare and assist in the long range and annual plans for camp sites and facilities. Another responsibility is to oversee the development of campsites. The ground breaking Thursday was a part of the long-rang-e plan for Trefoil. Carolyn's Kitchen Strawberries, Summertime ) Treat By CAROLYN KURR WARDLE ) One of the many reasons I enjoy , summer is that there is an abundance of fresh produce at the peak of its flavor. Strawberries are one of these treats that are only around during the summer. . Because I love fresh strawberries and since they are only available f fa a hnutal time, I like to use them in as many ways as I can; Here are some favorites I wouldlike to share with you. Strawberries and Cream uses fk sour cream instead of sweet. Serve 1) each person a bowl of whole cleaned strawberries, then invite them to dip the strawberry in sour cream and finally brown sugar. I'm 7 positive you won't have any leftovers. They are wonderful. Strawberry Orange Ice is a delightful summertime cooler. It is light and refreshing with the added bonus of being easy to make. An elegant dessert with the delicate taste of almond, Strawberries with Almond Cream makes a rich and delicious finale to any special meal. Strawberries and Cream 2 pints strawberries, washed 'A pint sour cream 'A brown sugar Serve each person a dish of strawberries arranged around a fwp of sour cream and some brown sugar. Dip each strawberry t m sour cream and then brown j sugar. Makes 4-- servings. Strawberry Orange Ice i cups orange juice cup lemon juice 3 Pints strawberries, hulled 1 cups sugar 's tsp. salt In covered blender at high speed, blend all ingredients until smooth, blending about half at a time. (Or, if you like, press strawberries through food mill into large bowl; stir in remaining ingredients.) Pour strawberry mixture into a 13" x 9" baking pan and mix well. Cover pan with foil or plastic wrap and freeze until partially frozen (frozen firm to one inch from the edge of pan), about 4 hours, stirring occasionally. Spoon strawberry mixture into chilled large bowl and, with mixer at medium speed, beat until smooth but still frozen. Return strawberry mixture to baking pan. Cover with foil or plastic wrap and freeze mixture until firm, about 3 hours. To serve, remove mixture from freezer and let stand at room temperature 10 minutes for easier scooping. Makes about 10 cups, or 20 servings. Strawberries with Almond Cream 1 3'2 to 3 oz. package vanilla flavored instant pudding and pie filling 2 cups heavy or whipping cream 1 cup milk V2 tsp. almond extract 2 pints strawberries, hulled In large bowl with mixer at low speed, beat instant pudding and pie filling, cream, milk, and almond extract until blended. Increase speed to high and beat until soft and peaks form. Spoon mixture in center of chilled bowl; arrange strawberries around mixture. Makes 6 servings.
