Show m EXTRACTS As a result of a general Inspection of the various kinds of flavoring extracts ex-tracts on the markets in Utah, a number num-ber of samples of tho product have been taken by WlllarJ Hansen, state food and dairy commissioner, and his assistants, and will bo tested by State Chemist Herman Harms to determine their quality. The samples of the ox-tracts ox-tracts have been taken from various parts of the state. One of tho violations viola-tions found is that of deception In the use of the names of the product. According to Stnto Chemist Harms, the flavoring extracts used in desserts, cakes and confections are frequently adulterated "Artificial extracts," said Mr. Harms, "are commonly sold instead of those prepared from natural sources and cheaper products than those supposed, sup-posed, to be used are as often employed; em-ployed; for example, extract of vanilla should be made from tho Mexican vanilla benns. This Is a very high priced bean, but more commonly a cheaper Bourbon aud more often the cheapest Tahiti bean is employed In making vanilla extract. "Oil of lemon grass and oil of clt-ronella clt-ronella are sometimes substituted for pure lemon 611; artificial benzyle aldcbype lor the true oil of bitter almonds; raothyl salicylate for oil of wintergreen, etc. "Methyl, or wood alcohol, has been used by unscrupulous manufacturers In flnvoring extracts, rendering such extract decidedly poisonous preparations.. prepara-tions.. "Recently a new form of flavoring extract has made Its appearance on the markot. This contains no alcohol, but ia-a mixture of tho flavoring oil, sugar, glycerine and gum tragacanili. These are put in some collapsible tubes, and retail for about the same as the liquid extract. Only a small piuch, however, is to be used for flavoring flav-oring purposes. "Manufacturers have frequentlv tried to evade the lettor of the law lii tho case of extracts, that aro below the standard, by labelling them with anch names as Tlavor' or 'Flavoring. Tho United States department of agriculture ag-riculture has ruled that extract flavors flav-ors flavoring, essence, spirits and tincture as applied to solutions used for flavoring food products, aro synonymous syn-onymous terms, and this ruling has also al-so been adopted by tho dairy and food huread of Utah. "In tho past many samples of extracts ex-tracts have been examined and found to contnin short measures. In other instances a purchaser is misled bv the appearance of a largo container and small amount of contents. There are bottlos which look like three or four ounces, whero as a matter of fact they hold only about 1 1-4 to 1 1- ounces 'of contents." oo |
