Show FOR THE MEAT COURSE. Cut the tongue of a calf's head into dice and heat it in a brown sauce made with a minced onion, fried in butter, a tablespoonful of butter, half a dozen minced mushrooms, a cupful of the liquid in which the head was boiled and seasonings; color to a rich brown, pour out on a flat dish, break over the top an egg for each person, keeping the' yolks whole, and set in the oven until the volks set. Take a pint- of dice of the meat from the head and heat it In a Spanish sauce; add half a cupful of rich tomato sauce;, ffive one boil and serve with points of toast. |
