Another class of flavors resulting from bacterial contamination are called stale, cheesy, yeasty, bittei, or acid. All of these off flavors result in poor quality of cream and cause a financial loss to the dairy farmer. They may be eliminated by keeping cows out of pastures which contain undesirable weeds, handling nnd storing cream in sanitary surroundings, and hy careful methods in production and handling. Cooling of cream to 50 degrees Fahrenheit Fah-renheit immediately after separation and frequent deliveries will help win the battle against poor cream. |
