November 6, 1987 Senior Gtizen News Meet Your Neighbors Summit County Cooks Meet Your Neighbor Senior Citizens V North Summit 1 The week of Oct. has been a busy one for the North Summit Senior Citizen members. We had real good attendance at the two weekly meetings, where 26-3- the regular activities of the members was enjoyed by all in attendance. We celebrated the birthday of Eleanor McKnight with delicious caramel corn, furnished by Eleanor and her sister May Hopkins, before dinner was served. Then dinner was supplemented with birthday cake and ice cream in honor of Edna Spriggs' birthday. Members of her family furnished the desserts and stayed to have dinner with Edna. The menu for the day was pork chops, baked potato and sour cream, whole kernel corn, tossed green salad, bread and butter, plus the dessert, which was served to 60 people. Friday we had hamburger and rice casserole, green peas, cottage and tomato salad, Halloween decorated cupcakes and ice cream, served to about 25 persons. Pres. Ball conducted short business meetings both days, with the minutes of the previous meetings being accepted as read by Sec. Ruth Taylor. Many more articles were brought for the bazaar, and were shown by Vice Pres. Morby. Pres. Ball selected Frank Toole and Floyd Try on to offer the prayers at these meetings. On Wednesday the band members held a rehersal of the musical numbers they will be presenting to the members of the Senior Citizens Club at Park City. On Thursday the band members made the trip to Park City where supper of spaghetti, garlic bread, green salad, cupcakes and ice cream sundaes was enjoyed by Buelah Willoughby, Laura and Owen Roberts, Lorraine and Ralph Garfield, Eleanor Morby, Marie Warburton, Verda Shaw, Elsie Gunn, Ethel Lowham, May Hopkins, Kathleen Blonquist, Grant Geary, Eleanor McKnight, Mabel Jones, Myrla Vernon, Lorene Stokes and Margaret Hennek. After which they entertained the hosts with many of their most favorite melodies they do so very well. It was a nice outing for the group. Thursday afternoon Charles and Betty Dahlin, Lorraine Garfield and Margaret Hennek, representing the North Summit Senior Citizen members attended an awards assembly held at the elementary school for the purpose of awarding first, second and third place prizes to each class for the winning posters they had made for the Highway Safety Buckle-u-p program, which had been judged by the senior citizen members. It was a very impressive ceremony. The pupils were highly complimented by the faculty, highway patrolman and others conducting the assembly. The senior citizens received a certificate of award in recognition of their participation in judging the posters. The certificate of award will be on display at the club house. A small quilt was finished by the quilters Hazel Ball, Gwen Blonquist, Edna Spriggs, Rachel Wright, Vernese Clark and Eleanor Morby, this week. After our meal on Friday the students from the elementary school, accompanied by teachers and several parents, all in Halloween costumes, walked to our club house for candy treats the officers of the club had thoughtfully prepared for them. Grandparents and grandchildren, friends of the group enjoyed the brief encounter with these lively little folks. An estimate showed we could have had about 400, guests that day. How fortunate we are to able to shre pleasure be and happiness through such a simple deed. My friend Elroy claims the threat of a recession doesnt worry him. Heck, he says, "I was broke during the boom days. Summit Cooks Ann Morrill of Hoytsville is our feature cook. Ann and her husband Gary have seven children: Beau, Brett, Jodie, Jamie, Jennie, Julie and Ben. They have lived in Hoytsville four years. Ann enjoys sewing, she likes to tie quilts, enjoys reading when she gets a chance, and likes to garden in the summer. She also loves supporting her boys and husband in sports. Ann keeps busy in church work as a counselor in the Young Womens Presidency in the Hoytsville 1st Ward. Ann's family, even the baby, loves this enchillada recipe which she got from a friend. Chicken Enchilladas doz. soft shell enchilladas 2 cans cream of chicken soup Vi tsp. salt 3 c. chopped, cooked meat (chicken, ham, turkey, etc.) 2 c. grated cheddar cheese 1 Vi c. onion Mix soup, sour cream, salt, meat, cheese and onion. Spoon into enchillada shells. Roll and place in greased dripper pan making sure seams of enchilladas are on the bottom. Pour 1 can enchillada sauce (can use less) over top. Sprinkle with 1 can grated cheese. Steve Harvey and partners. Bake at 350 for about 0 min. or until enchilladas are heated all the way through and cheese is melted. 25-3- Baked Apples Core apples and place in baking dish. Fill pan with about Vi inch of water. Fill centers of apples with: 1 This, brown sugar Dab of butter in each Sprinkle of cinnamon on each apple Cover with foil. Bake 1 hour at 350. Serve with ice cream or whipped cream. North Summit Senior Citizens BAZAAR Meet Your Neigtibor It happened this way: "We were looking for a house, but It bought a truck instead. chanced to be a sanitation truck, a natural for someone like Steve Harvey, who works for Plumber's Supply in Salt Lake, and knows all about malfunctioning sanitation systems. Steve and his wife rented the house and he and his dad bought Bob Fitzgerald's septic pumping truck parked in the backyard. And so a partnership was established, pledging to serve the needs of Kamas Valley quickly and efficiently. Ken Harvey lives in Salt Lake and will the-valley- . . They have call forwarding service to receive any S.O.S. messages, and will be glad to handle emergencies as soon as possible. Ken prefers to make evening or weekend service calls though, so that he can talk to a male member of a household; someone who understands the language. ' The boys hope to have a full time enterprise established by spring. If necessary, they will try to do winter pumping, but urge customers to plan ahead, and arrange to have septics cleaned before the snow fly s' ' for easier access. Other services include plumbing and boiler maintenance, pipe thawing and for those who entertain en mass. Actually they will endeavor to win contracts with construction companies and the Forest and Park Services, for rental and upkeep of the portable port-a-potti- es facilities. The community extends Harvey's a warm South Summit Oct 26. It was a beautiful fall day for the seniors to meet. They were all foil of cheer. Elmer welcomed everyone and wished them a good day; he welcomed Roy Thornton after a long absence. He announced the Halloween party Oct. 29. Please come in costume. ' Our County Nurse, Stephanie ' Hurt, told us about the over 60 physicals for the seniors who have not seen the doctor in the past year. They are free. The seniors are to call the clinic for appointments Nov. 3. We were served beef pot pies with bisiquick topping, vegetable and fruit salad, pickles, cheese plate, with cake and blueberry sauce for dessert. There were 37 for dinner. Following dinner the seniors enjoyed cards, pool and visiting. It was a lovely day for our Halloween party. We were greeted by a vampire at the door, so realistic, 1 was afraid someone might have a heart attack. There were witches, pioneers, pirates, all kinds of costumes. gypsy Our president welcomed one and all and said our costumes improved our looks. We had a parade around the room so everyone could get a good look. There was a mysterious lady who fooled everyone. The judges picked our gypsy, Zella Johnston, for first place winner and our vampire, Harold Richards, first place, for the men. They were given a prize. Our mystery lady was Letha Miles. Congratulations. It was a fun party. For dinner we had chicken fried steak, creamed peas and potatoes, cole slaw, hot rolls, grape jelly with chocolate cupcakes with orange icing for dessert. The room and tables were decorated for Halloween, with Halloween candy for everyone. Edna Fitzgerald and Irene Peterson entertained us on the piano and organ. It was announced that Mae Olsen and Ethel Sweatfield were both in the Wasatch County Hospital. We hope they will soon be feeling better. There were 32 seniors for dinner. d It was a day.
