GEORGE — As a freshman living in the residence halls, Dixie State student Preston Hair is required to eat on-campus. He admitted that’s the primary reason he was eating at DSC’s Red Rock Cafe one recent morning. However, he said, “the food is amazing and the service is awesome. They remember your name and that’s so nice: Dixie Campbell is one of the faces of Dixie State's food service. She has worked in the department at the college for the past 14 years. “They call her “Grandma,” said Martin Peterson, food service director. That pleases Campbell. “I enjoy the kids’ she said. “I bet I get 30 hugs a day. That's better than any medicine I take” Campbell is originally from Southern California. As a single mother she raised four daughters and one son. She has 19 grandchildren and 19 great-grandchildren. Her children include Kelly. Campbell, Cindy Jacobsen, Kaye Campbell, Kim Schuman and Colleen Kirby. “IT moved here because I became a chronic asthmatic,’ Campbell said. “The climate is much better here? She said she started to work at the college shortly after she moved to town and it “was the best thing I ever did’ Campbell is proud of her ‘association with the students. . “I send missionaries off and I make a book of quotes and stories for them, she said. “Last year I sent 11” Campbell is also proud of her boss and her.co-work- ers. “As far as food service, we have two great chefs and _a breakfast chef who also works at the Branding Iron in Pine Valley,’ she said. Those chefs include Francis Smit, Joe Hadley and Kurt Madsen. DSC’s food service department earns awards from the National Association of College and University Food Services on a regular basis. “I eat here every day, said Sam Nay, a non-traditional senior who returned to school after earning his associates degree 16 years ago. “It’s affordable and good. You cant go anywhere else and get anything cheaper. Tessa Nelson, a freshman from Salt Lake City, agreed. “The price and the quality of the food is a lot cheaper than going out to eat, Nelson said. “And, I like the friendly service” Peterson said his people LivE bh Bob Hudson / St. George Neighborhoods Members of Dixie State’s football team, including Richard May, Aaron Davies, Jayson Malufau and Craig Johnson give Dixie serve approximately 1,300 meals a day. They are open seven days a week through most of each semester. While the salad bars and related offerings are available all day, breakfast is from 7:30 to 10:30 a.m. with lunch from 11:30 a.m. to 1:30 p.m. and dinner from Campbell (center) a group hug.
