Wednesday, July 31, 1985 Summer Desserts Welcomed To Top Off Hot Afternoons LYNDIA GRAHAM Spread over the crumb mixture Review Correspondent Cool and light LAYTON summer desserts are a welcome end to a hot summer day. Most of the following recipes are simple to prepare but nice enough to serve at any special summer party- package small marshmallows ' water can chilled evaporated milk can crushed pineapple 2 Tbs. 1 (13 oz.) Tbs. lemon juice 1 cube butter graham crackers, crushed Melt the marshmallows with the water and 2 Tbs. of the butter over low heat. Whip the cold evaporated milk until thick and frothy. Add the marshmallows, the crushed pineapple, and the lemon juice. Pour into a 9x 3 inch pan. Set 1 12 1 aside. Gently fold in whipped cream until evenly blended. Turn mixture into a 9x5x3 loaf pan. Cover tightly with aluminum foil and freeze 24 hours. Unmold onto a serving tray and slice to serve. cups sliced strawberries package strawberry jello cup hot water Vi lb. marshmallows Vi cup milk cup whipping cream Mix crumbs, sugar, and butter and press into a 9x9x2 inch pan. Let stand a half hour. Disolve gelatin in boiling water. Chill until partially set. Combine marshmallows and milk and melt. Cool. Whip the cream until stiff and gently fold in the marshmallow mixture. Add the berries to the gelatin and swirl the mixture into the whipped cream and marshmallow mixture. Pour into the crust and chill well. Young-at-Hea- Ice cream novelties found in the grocers freezer have always appealed to Americans. To celerate summer special occasions and birthdays, ice cream novelties are ideal and can be created at home. Kids cones are fun to make for a childrens party. Youngsters will enjoy getting involved in the action. With a supply of vanilla ice cream, some cones, cookie and candy decorations, one can make a soldier or drum a for circus major party. A scoop of ice cream in a cone can be decorated with cookie butterfly wings or rimmed with gumdrop flowers.
