in common: to emerge as the winner of Meal Preparation the annual Contest which was sponsored by the Weber County Utah State University Extension Service There were 12 participants including one boy at the event which was held Friday in the downstairs kitchen at Weber High School The young chefs had three hours in which to prepare and serve a meal from scratch and then clean up the entire dining 4-- H well-balanc- ed area Points were deducted from the final score if anyone showed up mix with a boxed or or breads for either cakes The contest was open to any member between the ages of 12 and 17 preferably those who were enrolled in a food project The contest was divided into junior and senior divisions There were two senior teams and four junior teams each laboring with all of their might over hot stoves and whirring mixers The young people had prepared all year for this climax to their cooking skills One father Ben Tueller who is also with the USU Extension Service said “The family gets excellent meals for about a month before the contest starts “I have had two girls who entered the competition in previous years and went from the state event to the Denver regional were judged on meal 4-- H Bay she and Lisa Hall served up a dinner centered around the tiny fish They dipped the fish in a batter and deep fried them Following is their batter recipe which can be used with almost any type of fish: ” SUPER BATTER cup flour tablespoon melted butter or 1 looking oil teaspoon salt 14 teaspoon pepper 2 beaten egg yolks 34 cup flat beer or buttermilk 2 stiffly beaten egg whites Four servings of fish (any kind) Beat egg yolks with melted butter and salt and pepper Add milk and flour alternately Beat well Can refrigerate for 3 12 hours 1 18 When ready to use fold in ly beaten egg whites stiffBefore dip2 ping meat coat lightly with flour The swiss steak dinner prepared by DeAnn Dye and Shanna Dye was topped off with a serving of apple crisp which was whipped up as follows: APPLE CRISP 12 cup flour 12 cup oatmeal 12 cup brown sugar 14 cup butter 18 teaspoon baking powder 18 teaspoon salt Mix above ingredients together to make topping 4 tablespoons butter Mix sugar and cinnamon to- gether and put over apple slices Then spread the butter over the mixture cups apples (sliced) 13 cup sugar had entered two years ago and decided to try again this year The coating on the chicken provided the baked meat with a tender crust and moist meat: SESAME BAKED CHICKEN chicken cut up for frying egg beaten 12 cup milk 1 cup flour 1 teaspoon baking powder 1 X Put Hadley and Mary Sharpes outfitted in Aunt Jemima costumes spent their three hours creating a Southern style meal centered around fried chicken breasts For dessert they served their guests pound cake dot aprons and high heels senior division entries Leslie Beckey and Sally Summers served their guests elegantly on a blue tablecloth and using crystal like glassware for water and beverages They served “Lamb Chop New 13-in- ch Mix both packages of pudding with the milk and spread on the cream cheese layer Cover with the rest of the whipped topping Chill and serve Yields 15 servings Another taste treat served by Miss Beckey and Miss Summers were the delicious orange rolls: ORANGE ROLLS tablespoon yeast dissolved in 14 cup luke warm water Add 12 teaspoon salt and set aside 1 Mix together: 14 scant cup sugar beaten egg 12 cup warm water 4 lamb chops 1 inch thick 14 cup vegetable oil 1 tablespoon shortening Add about 3 cups flour and mix 1 teaspoon salt well 18 teaspoon pepper Let raise then roll half of dough 1 cup tomato juice mixture out or all of it however 4 green pepper rings much you want to work with Roll 4 onion rings out in a rectangle shape Melt about 1 tablespoon of marBrown chops in shortening until garine and spread on dough Then add orange mixture : golden brown season Add resimCover 1 maining ingredients grated orange rind (fine) mer for 30 minutes or until how they keep their kitchen arrangement There can be no dirty pots and pans in the kitchen area” she said The judges were in and out of each section of the kitchen for the entire three hours making Rick Jensen 12 along with his sister Julie 14 was the only boy in the group They worked laboriously for the three hours even though junior division winners (of which they were a part) cannot be eligible to enter the state and regional contests Only senior division winners may be selected for the higher honors The Jensens whose parents are Jerry and Carol Jensen of Farr West served “Sesame Baked Chicken” along with homemade “Tutti Fruiti Sherbert” which was frozen within the three hour time limit Their mother said that the reason their baked potatoes were not quite done is that “they had practiced all week with a different type of potato from our own garden” and these larger potatoes had been purchased from the super market Despite the “undone” spuds and the sherbert which wasn’t
