Loretta (in Chinese her name is Yin Dih) was born in Taiwan to parents who escaped from China when the communists entered that country. Chinese women retain their maiden name after marriage, so she is known to her students as Mrs. by Olga Milius Green Sheet Staff Writer KEARNS. It's a long way from Taiwan to Kearns and there are many differences in culture and lifestyle, but Loretta Chou, now teaching second grade at South Kearns elementary, has made the adjustment. She was encouraged to come to the United States by her husband, Wing Chou. Mr. Eng is an engineer and has worked in Taiwan and Saudi Arabia. He received a master, s degree from Utah State University, while Loretta earned her master, s at the University of Utah. They spent some time in New York and are now back in Utah where Mr. Eng is working on a degree in computer science while she teaches school. There are a lot of differences between Utah and Taiwan, she noted, not the least of which is the weather. I never saw snow in Taiwan, we didnt even have heaters in our homes, although my parents exshe perienced cold in China, observed. There are also differences in food. We still eat rice every day in our homej she noted. I bought an electric pan that I can cook it in and I can make enough to last a long time. We just help ourselves out of the pan when we want to eat, I never unplug it until it is empty. She also uses a wok. Chinese dishes need a wok. I could never cook them in a pan, she said. Clothing is cheap in Taiwan, said Loretta, even good quality silk. I would get my pay, in cash, and buy material to take to the tailor. she Everything was tailor-madsaid. I was teaching in junior high and the students would tease me about wearing different clothes every day. Ready-mad- e clothing, or good quality, is also cheap in Taiwan, she added. Chinese women wear a lot of silk, it is so cheap and easily obtained and very beautiful, she noted. Education is of great importance to everyone. Parents, children, society in general feel it is of paramount importance that children do well in school, she pointed out. Students work hard because they want to get into the better school as they grow older, she explained. Children attend elementary school and, if they wish to go on to junior high, must take a test at age 12: Schools are ranked, and in order to enter a better junior high, the student must rank well in the test. Getting into the better junior high makes it possible to test into a better high school and that, in turn, presents the opportunity to enter a better college, she said. I am grateful to our principal, Catherine Perryman, for giving me confidence in myself to teach here at South Kearns. I had a hard time getting a regular teaching position after the bilingual classes and I am happy here. Also, I think my parents are very proud, she added. Loretta enjoys books, music, travel, flower arranging - and cooking Chinese food. I enjoy my work. I enjoy America. I went to visit my family, all of whom are still in Taiwan, during the summer. At that point, the student can decide what he or she wants to do, and classes will be geared toward that goal, whether engineering, teaching, medicine, or some other field.
