Dont let it go to seed before you cut it. You can freeze spinach for use in the winter. To prepare for freezing wash spinach well to get rid of the grit and dirt. Blanch in mirapidly boiling water nutes, depending on the heaviness of the greens. Cool under cold running water and package in plastic bags and freeze. Be sure to drain in colander before packaging. . SPINACH IS very high in potassium and vitamin A. For delicious spinach add to a quart of uncooked spinach add Vi cup minced onion that has been cooked in butter or margarine until soft. Cook the spinach and chop fine. Drain and stir in cooked onion. Serve immediately with salt and pepper to taste, also add vinegar or lemon juice if desired. CHEESE CREAMED SPI- BEVERLY THOMAS USE WHAT seasonings you like and the amount you desire. Combine in quart jar or blender. Shake well and refrigerate over night. Makes 2'h cups. Sour cream is good stirred into cooked chopped spinach. Use about Vi cup to Wi cups cooked spinach. lic salt SUMMER SALAD f Crowned Defense Depot Rodeo Queen SHE GRADUATED from Clearfield High School in 1981 where she was a member of the Falcettes drill team and the Spikers High School Rodeo Club for three years. She qualified to go to the state high school finals all three years and in 1980 she qualified in the barrell racing event to go to the national high school rodeo finals which was held in Yakima, Wash. She was Davis County Jr, Rodeo Queen in 1980 and has also been queen of two high .school rodeo clubs, DDOU first and second attendant; South Weber Jr. Posse queen, and runner-u- p to the Weber County Jr. Posse queen. On June 22 she competed in the Miss Rodeo Ogden Queen Contest and took the horsemanship and photogenic awards. She will be competing in the Miss Rodeo Utah contest in July. BEVERLY WAS a member of the South Weber Jr. Posse for eight years and is currently a member of the Utah Barrell Racing Association. She is employed by Action TV Sales in Ogden and plans on attending WSC in the fall. .wvn- 2 pkg. 10 oz. each frozen chopped spinach or 2Vi cups cooked, chopped spinach 1 can cream mushroom soup 1(M oz. can 1 cup shredded cheese 4 oz. COOK SPINACH and drain. Pour into IVi quart casserole and top with soup. Sprinkle cheese on top of soup. Bake uncovered at 375 degrees for 15-2- 0 minutes or until bubbly. Serves 6-- 8. SPINACH SALAD WITH . SWEET AND SOUR DRESSING Wash and drain one pound of spinach. Dry and tear leaves, do not use stems. Hard boil six eggs and let them cool. Shred eggs. Cut 'h lb. bacon into small pieces, fry and drain. Toss together spinach, eggs and bacon. Add dressing when ready to serve. SWEET AND SOUR DRESSING Vi cup salad oil yt V rots 6 oz. of cheese cut into thin strips 2 cups diced ham TOSS TOGETHER and cover with oil and vinegar dressing as follows: Vi cup vegetable oil 2 Tbsp. vinegar 2 tsp. prepared mustard tsp salt tsp basil leaves Va tsp black pepper Va tsp garlic powder. Beat well together and pour over salad. JACOBS, American Young Mother of the Year, will be the featured speaker. Rehearsals for this event will be held at the Kay South LDS Stake Center, 870 S. Main St. for those participating in the chorus and orchestra at 8 a.m. each of the four Sundays during the month of June.
