Since its a rare family that can eat all of a large tom, why not put that extra meat to good use and prepare and freeze several turkey dishes to use during the busiest month of the year. You might even consider buying an extra large bird to have plenty for planovers. Its important to remove poultry meat from the carcass as soon as possible to avoid food poisoning, so plan to strip the bones the same day as the turkey is cooked. Dont overlook using the bones for turkey soup. After a holiday meal when food has been so abundant, a day or two of light eating seems to be in order and a light meal of soup and sandwiches really fills the biU. Cut two pieces of fabric 16 inches x width of fabric. Sew the two pieces together so you have an 88 inch piece. Fold in half with right sides together and sew leaving both ends open. Turn and press. From one edge stitch in 3 inch and from the other edge sew in 1 inch. Sew lace to both sides of the tube. Slip the tube of material over the styrofoam ring and glue piece of styrofoam that was cut out, back into place. The toothpicks will reinforce the break. When the glue is dry adjust tube evenly around the ring. Make a bow out of the left over fabric and lace and glue to the ring. Pour sauce over bread and turkey mixture and poke with a fork a few times to allow sauce to penetrate mixture. Dont stir. Bake at 375 degrees for about 45 minutes, or cover with foil and freeze. Depending on the type of bread and the amount of turkey you choose to use, this casserole can feed up to 15. You may want to make it in two pans for family size servings. Measure them and mix with twice that amount of both milk and water. (For instance, if you have 2 cups of dripping use 4 cups of water and 4 cups of milk.) Bring to a boil to blend flavors and add salt and pepper to taste. Add one or more cans of creamed corn (depending on the amount of the drippings). Heat again and serve. Chopped turkey pieces can be added if desired. Freezing ahead for busy days makes sense anytime, but during December it seems almost essential in order to have a relaxed time for friends and family and still get everything done that the season seems to demand. (If you are going to freeze these be sure to bake them first then simply reheat before serving for a few minutes until hot.) Serve with the following sauce: chopped green pepper of a small onion, chopped ft cup turkey broth or water 14 tsp. salt 14 tsp. pepper lft cup grated Cheddar cheese (about 14 pound) Cook spaghetti and drain. Place turkey, green pepper, and onion in 14 10 slices of white 2 cups chopped Strip the meat of a turkey carcass and separate the bones into small enough pieces to fit into a large soup kettle. Cover them with several quarts of water and put on a slow burner for up to 12 hours. Remove the bones and finish picking off the meat to return to the broth. Since turkeys have several small bones that will separate when steamed, be sure that you check any pieces which may have cooked off in the pan by lifting them out with a slotted spoon and checking for bone fragments. Add enough water to the broth to bring the total volume to about 3 quarts and bring to a boil. Add one large onion, finely minced, 1 cup finely chopped celery, shredded carrots, 2 tbs. dried parsley and salt and pepper to taste.
