THERE IS a beautiful cranberry salad, colorful to use during the holiday season as well as being delicious with pineapple, orange, apple, celery and nuts. This bright colorful salad is especially good during the fall and winter, it could go with any meal. After her marriage to Verl Garrett, Lucille and Verl lived in several Utah cities while Mr. Garrett completecThis schooling and worked teaching school in different districts. Twenty-thre- e years ago, Mr. and Mrs. Garrett and their family of six children settled in Clearfield. Mr. Garrett is now teaching at Clearfield High School. AS THE GARRETT children reached school age, Lucille decided to return to college and get a degree. Teaching was the field she chose. She is presently teaching a fourth grade class at Cook Elementary in Syracuse. LIKE MOST women who live in this area, Mrs. Gar- FILLING 2 cups raisins or dates, ground 3A cup sugar V cup water COOK FILLING mixture until thick and add V2 cup nuts. Cool. One Garrett family favorite at Christmas time is a Plum Pudding that came from Verls grandmother. The pudding is quite rich so small portions are usually served. The original listing of ingredients are given along with the exact amount. We carefully measured the ingredients as they were listed in the original recipe, Lucille explains. Sometimes a large .pan of this and a pinch of that is hard to follow and get good results. GARRETT PLUM PUDDING pound raisins (2 cups) 1 pound currants 23A cups) 1 pound suet or 2 cups margarine Vi pound brown sugar (1 13 cups 5 eggs 3A pound bread crumbs (IV2 cups) Vi brown and white flour mixed (2 cups total) 1 tsp. nutmeg 1 pound lemon peel or fruit cake mix 1 pint brandy or any fruit juice such as grape, orange. Brandy or rum flavoring can be added to the fruit juice. PLACE THE mixed pudding in a can and boil in a large pan of water for 3 hours. 1 PUDDING SAUCE cup butter Vi cup cream or canned milk 1 cup sugar 1 Vi tsp. vanilla Dash nutmeg Vi HEAT UNTIL butter melts and the sugar dissolves. Each year she tries at least one new canning recipe. Some she never uses again other recipes she tries becomes lasting favorites. Maraschino cherries are a canned speciality that Lucille usually makes each fall. Bottles of cherries are given away as presents. Filled cookies are considered a delicacy by many because of the time and effort required in preparing this special cookie. Her home is attractively decorated with handmade objects including beautiful Christmas ceramics. In the area of cooking, Lucille has a reputation for preparing nutritious meals and never repeating a menu more than once or twice every two or three months. She makes delicious desserts. MRS. GARRETT claims she cooks by the book. She is careful to use recipes that give accurate measurements and careful directions. Anyone can succeed at cooking if they have a good recipe, Lucile states. This is the advice she has passed on to her daughters. It isnt necessary to spend a lot of money on cookbooks, Mrs. Garrett believes. She collects brochures that contain good recipes . Many recipes are cut from magazines. The recipes that come from special friends and family members are identified carefully with the persons name and the date the recipe was received. WHEN I MAKE acertain dish, I look at the persons name on my recipe card. This brings back memories of friends and events that took place years ago. Some of the people who shared recipes with me have moved away. I remember them through the recipe they shared with me. My sister and I correspond by letter frequently. We have made it a practice to include a recipe in the letter each time we write. ORANGE APPLE PIE 6 cups sliced apples (6-- 7 apples sliced thin) Vi cup orange juice 'A cup brown sugar Vi cup white sugar 1 cup water Vi tsp. cinnamon 2 Tbsp. butter Pastry for a pie PUT APPLES, juice and sugars in a saucepan. Add water. Cook until apples are just tender. Remove apples and continue cooking juice until thickened. Use a little cornstarch mixed with cold water and add to juice if it does not thicken. Add cinnamon. Place apples in pastry lined pie tin and add the juice. Dot with the butter and place the top crust over the pie. Seal the edges. Bake in hot oven 400 for 40 minutes. FROZEN LEMON DESSERT V cup graham cracker ' crumbs 'A cup sugar 1 Tbsp. grated lemon rind 'A tsp. salt 'A cup lemon juice 3 eggs separated - reserving the whites A cup sugar cup whipping cream whipped or 1 envelope dessert topping mix, whipped LINE AN 8 or 9 inch pan with half the crumbs. In a saucepan blend 'A cup sugar, lemon peel, juice, salt, egg yolks, reserving whites in a 1 small bowl. Cook over medium heat until mixture bubbles, stirring constantly. Cool. Beat egg whites until frothy, add A cup sugar slowly and continue beating until they hold stiff peaks. Fold beaten egg whites and whipped cream into cooled lemon mixture. Pour into pan lined with crumbs. Sprinkle with remaining crumbs. Freeze four hours. Serves six. Cover with foil if left in freezer longer than four hours. QUICK HOLIDAY CHERRY PIE 1 cup powdered sugar 1 z. cheese 1 package cream cup whipping cream, whipped 1 baked pie shell or graham cracker crust 1 can cherry pie filling CREAM POWDERED sugar and cream cheese. Whip cream until it stands in peaks. Fold cream into cream cheese and sugar mixture. Place in cooked pie shell. Top with cherry pie filling. Chill.
