Mr. and Mrs. Harvey Peterson are now building a lovely new brick home on the Syracuse highway. Mr. and Mrs. Phillip J. Bennett entertained their birthday club at their home Monday evening. It's a tricky dish but well worth the effort. Place lYz c. water In top of double boiler. Sprinkle Yz c. nonfat dry milk, Yz tsp. salt, Vfe tsp. each pepper and nutmeg over surface. Beat with rotary beater until just blended. Add 4 egg yolks and beat to blend. Place over gently boiling water, and cook, stirring constantly, for about 5 min. Stir In Yz lb. process Swiss cheese, finely shredded, and lYz c. bread cubes, lightly packed. Continue cooking until cheese Is melted. Beat 4 egg whites until stiff. Remove cheese mixture from heat, then fold In egg whites. Pour mixture into ungreased casserole. Set casserole In baking pan and put on rack In oven, filling baking pan with water to depth of one Inch. Bake at 300 F. until golden brown and puffed about lYz hours. Should be served at once. 2-q- A Meal-ln-O- ne For an excellent meal-ln-othat Is hearty and satisfying, place 4 c. water In large saucepan with 2 tsp. salt and Y tsp. pepper. Add one stalk celery cut In pieces, one sprig parsley and 3 peppercfjrns wrapped In a piece of cheese-clot- h and tied securely with a string. Bring water to a ne white onions, 6 medium-size- d carrots, cut Into halves, and one c. cut green beans, fresh or frozen. Cook, tightly covered, In boiling water, 15 min., then reduce heat. Drop in one lb. fresh or frozen fish steaks or thick fish fillets. Cook in simmering water 20 min., or until fish and vegetables are done. Drain fish and vegetables, reserving fish stock. Measure fish stock and If necessary add water to make 3 c. Cool slightly. Sprinkle Yz c. nonfat dry milk and Y c. flour over surface, then beat with rotary beater until Just blended. Place over low heat; cook until thickened. Stir In 3 tbsp. butter. Pour hot sauce over fish and vegetables, sprinkle with paprika, and serve at once. Macaroni Dish For a good macaroni quickie, melt 3 tbsp. butter In small skillet; add 2 tbsp. chopped onion and Yz c. canned mushroom buttons (cut In halves). Saute till onion Is slightly brown and tender. Cook 1 Yz c. elbow macaroni according to package directions. Drain well, keep warm. Place one c. water In top of double boiler. Sprinkle Yz c. nonfat dry milk, Ya c. flour, tsp. salt, Ya tsp. basil, dash of pepper over surface. Beat with rotary beater until Just blended. Add onions and mushrooms. Place over gently boiling water; cook, stirring the while, until thickened. Add Yz lb. tangy type cheese, finely shredded, stirring until cheese melts. Stir In 1 c. stewed tomatoes, and keep over hot water to heat. Pour hot sauce over macaroni. Serve at once. Top each serving with chopped toasted almonds If desired.
