Kathy likes to experiment with new, tempting recipes and prepare them for picnic outings in the nearby canyons. Living in a small community like Portage isnt too exciting," Kay admitted, flashing a smile. There really isnt too much to do. My husband is employed at the Defense Depot in Ogden. He also assists his father in farming which is tying and there doesnt seem to be much time for vacations, etc. just the usual routine each day. But with three small children Angela, 8; Jayme, 6, and Jason, 2, Kathy finds there isnt too much leisure time after preparing meals, washing, ironing and all the other tasks which young homemakers are involved in. The Rodericks have a comfortable mobile home which Kathy keeps immaculate. I found one of her hobbies is knitting baby blankets. They are comparatively easy to make" Kathy said, but they are colorful and very useful". Kathy is a teacher in the Primary organization. I really do enjoy cooking she said. "If a recipe sounds good, Ill try it! My family are easy to cook for. I am especially fond of making salads and casseroles. During the hot, sultry days of summer, quick, easy recipes appeal to most every homemaker. Today, Kathy shares some of her special favorites with Box Elder Journal readers. Stir in next five ingredients. Heat until bubbly, pour into 2 qt. casserole. Cut biscuits in half to form 20 half circles, place around edge of casserole. Bake at 375 degrees 25 to 30 min. or until biscuits are golden brown. Remove from oven; sprinkle with cheese. Return to oven until cheese melts. PINEAPPLE CHEESE PARTY SALAD can (1 lb. 4 oz.) crushed pineapple, 4 c. liquid, (drained pineapple juice and water) 1 pkg. (3 oz.) lemon jello, 2 pkg. (3 oz. each) lime jello, 1 pkg. (8 oz.) cream cheese, softened, l2 c. shredded Cheddar cheese, lVi c. cottage cheese. Drain pineapple, reserving syrup; Add water to make 4 cups. Heat 2 c. liquid to boiling point. Place jellos in large bowl; add boiling liquid, stir. Beat softened cream cheese into hot jello mixture. Add remaining 2 c. liquid; chill until partially thickened. Add Cheddar cheese, cottage cheese and pineapple to jello. Refrigerate until firm. , 1 25-3- A.M. Although these steaks require no preliminary preparation, they do merit careful and considerate treatment to be presented at their best, advises the Utah Beef council. This means broiling at a moderate, hot high, temperature. Take care not to overcook. Time estimates are not always exact in variable outdoor conditions.
