Most families will be enjoying turkey or chicken for Christmas dinner. What to do with the leftovers? Mrs. J. R. (Judy (.White) Adams of Deweyville shares a delicious favorite recipe for leftover turkey or chicken to tempt all Box Elder Journal readers. Turkey is not only an economical buy for a festive jjdinner this year, it is a most nutritious one. Turkey .meat is an excellent source of high quality protein and is low in calories. It is high in riboflavin and niacin and )of all popular meats is low in cholesterol. One of Judys favorite hobbies is collecting recipes. tThe ones they like are placed in a special file. Judy is a native of Provo where she attended )elementary schools and graduated from Brigham Young university, majoring in home economics. She had a delightful experience of attending the Church College in Hawaii for two quarters. During the )sumraer she was employed at the pineapple cannery in Honolulu to help toward completing her college. Mrs. J.R. Adams . . . We have a wheat grinder, she said. J. R. is real easy to cook for. He seems to like everything I make. I suppose I could say baking is my favorite form of cooking. Candy making is real fun too. GOLDEN CHICKEN OR TURKEY BAKE broiler fryer chickens or 44 to 5 c. leftover cooked chicken or turkey. 1 med. onion, cut in half, 1 stalk celery, 1 tsp. salt, 4 tsp. pepper, 2 c. day old bread crumbs (part white and whole wheat) 1 c. cooked rice (white, brown or mixed) iy2 tsp. salt, 3 c. chicken stock, 4 well beaten eggs, mushroom sauce. In large kettle cover fryers with cold water. Add onion, celery, 1 tsp. salt, pepper. Cover and simmer until tender (approx. 1 hr). When cool, remove skin and discard. Remove meat from bones and cut in pieces. Strain chicken broth and save for casserole and sauce. Combine bread crumbs, rice, salt, chicken stock and well beaten eggs. Add chicken (or turkey) and pour into buttered 8 Vi X 11 in. baking dish. Bake 1 hr. at 325 degrees. Cut into squares and serve with mushroom sauce. Likes Deweyville These small towns are so friendly. I keep busy with my school work and family. I have numerous hobbies. I like to sew, read, play and as a family we ) really enjoy camping and picnicing. We also like to entertain for family and friends. I have enjoyed living in many places before my marriage. One summer I was hostess at the Inn in Grand Canyon and I was also employed doing .secretarial work in San Francisco. After living in such large cities I guess I really appreciate small communities more where everyone knows everyone and are so close. I found Judy really enjoys cooking. She likes plain 'cooking good nutritious meals. She makes her own 1 ping-pon- g MUSHROOM SAUCE: 1 8 oz. can mushroom stems and pieces. lA c. (l2 stick) butter or margarine, (or chicken fat) Vi c. flour, 2 c. chicken stock, Vi c. cream or whole milk, 4 tsp. paprika, Juice of 4 lemon (2T) Drain juice from mushrooms. In small saucepan melt butter, stir in flour, add chicken stock and cream, paprika, and lemon juice. Cook and stir until thick and smooth. Add mushrooms. Serve hot over chicken or turkey squares. '!' It was while in Vernal she met J.R. and later .became his bride. After their marriage they lived in Dutch John (near Flaming Gorge) where Judy continued teaching in elementary school. They lived in Perry before coming to Deweyville about three years ago. Judy now is a teachers aid at 'the Lincoln Elementary school in Brigham City. J. R. is employed in the sheep business. Three children complete the Adams family unit. They are Gail who is 14, Emily, 9, and Christine, 6. Judy was recently released as the Relief Society president and is currently giving the homemaking She served as MIA president ) lesson in Relief Society. while living in Perry. I like living in Deweyville, Judy told me. So what more could we wish for you, than a warm Christmas? Thanks for your support. In saucepan combine dates, water and sugar. Cook, covered, till softened (approx. 5 min) Stir in lemon juice and vanilla Cool. Spread half of date mixture over Fold remaining date mixture and nuts into whipped! topping. Spoon over date layer. Freeze firm. HOT SPICY DRINK qts. water, 3 c. sugar, small cans frozen lemonade, 2 small cans frozen orange juice, 1 qt. cranberry juice, 12 whole cloves, 10 cinnamon sticks. Mix water, sugar and spices. Boil together about 10' 5 2 min. Add juices. Turn heat on low and let simmer slightly for an hour. Yields 7 quarts. TOFFEE 1 3 BREITENBEKERS c. butter, 1 c. sugar, T. water.
