Productivity of these milk cows reached 11,703 pounds of milk per cow in 1973, highest ever. Production of 866 million pounds of milk in 1973 was second largest ever and down only one percent from 1972. Fat in milk averaged 3.67 percent in 1973. Utilization of milk has changed radically in the past 50 years, with 34 percent of Utah milk used on the farm in 1924 and 32 percent sold as farm separated cream, 7 percent sold at retail, and only 27 percent sold to plants as whole milk. By 1973, only three percent was used on the farm, zero percent sold as farm separated cream, four percent retailed, and 93 percent sold to plants. Production in 1973 in million pounds totaled 7.6 for butter, 36.6 for American cheese, 16.7 for Swiss cheese, 53.3 for all whole milk cheese, 10.7 for creamed cottage cheese, 1.7 for nonfat dry milk for human food. Other manufactured dairy products produced in Utah in 1973 were processed cheese, cheese foods and spreads, condensed skim milk, dry whey, and evaporated whole milk. Located in Tremonton.
