LovaO Thanks to an all natural fat substitute, zucchini bread can now fit in a lowfat diet. A simple mixture of pitted prunes and water can be used to replace the large amount of oil used in a traditional zucchini bread recipe without sacrificing flavor. Prune purge keeps the bread moist and tender, while reducing the fat to 3 grams per slice a traditional slice has 25 grams of fat! Des-serts- Lowfat Zucchini Bread 1 1 1 f 13 cups sugar cup (4 ounces) grated zucchini cup water 14 cup Prune Purge 2 teaspoons grated lemon peel f) 4 teaspoon vanilla 2 12 cups flour 1 teaspoon each baking soda, baking powder and salt 1 12 teaspoons cinnamon 34 cup chopped pitted prunes 12 cup chopped toasted pecans 1 se (, Preheat oven to 350 degrees. Coat a h pan with vegetable cooking spray; set aside. In large bowl mix sugar, zucchini, water, Prune Purge, lemon peel and vanilla. In another bowl combine dry ingredients; stir into zucchini mixture with prunes and pecans. Spoon batter into pan; smooth top. Bake about 1 hour until pick inserted into center comes out clean. Cool in pan 5 slices. minutes; remove to rack to cool completely. Makes 1 loaf, 16 Prune Purge: In blender or food processor purge 23 cup pitted prunes with 3 tablespoons hot water.
