Show Schweinsbraten mit Sent (Roast loin of pork with mustard) 1 V Va sprigs fresh thyme or 1 Up. dried onion, about V lb. 24 very small white onions, peeled cup water 4 lb. loin of pork wbone Salt & freshly ground black pepper lb. caul fat, sometimes called lace fat cup Imported mustard (OljonDuueldorf) 6 1 Preheat oven to 400 degrees. Using a sharp knife, carefully trim away most but not all of the fat from the loin of pork. Sprinkle the pork with salt and pepper to taste. Open up the sheet of caul fat on a flat surface. Place the pork, bone side down, In the center of the caul fat. Smear the mustard all over the pork. Arrange the thy me sprigs at various points over the pork. Or sprinkle with thyme if dried thyme Is used. Bring up the edges of the caul fat to enclose the roast completely. Place the roast, bone side down. In a roasting pan and bake, uncovered, 30 minutes. Split the onion In half and thinly slice It. Scatter the slices around the pork. Arrange the small white onions around the roast. Reduce the oven heat to 375 degrees and bake 45 minutes. Cover loosely with foil and cook 15 minutes longer. Remove the foil and cover the roast with a heavy lid. Reduce the oven heat to 350 degrees and bake 30 minutes. Remove the roast, leaving the ulces In the pan. Remove the caul fat from the pork and transfer the roast to a senring dish. Use a slotted spoon and remove the small white onions. Spoon them around the roast as garnish. Put the pan juices through a food mill or sieve Into a saucepan. Skim off tat. Bring the juices to a boll and add the water. Bring to a boii again. Slice the roast and spoon a little of the sauce over each sllce.Servee 0-- 8 L, Cucumber Salad (Hot potato 2'k V 'h salad with white wine) lbs. potatoes Salt and freshly ground black pepper to taste cup dry white wine cup peanut, vegetable or com oil (or olive oil) Rinse the potatoes and put them in a large saucepan with cold water to cover. Bring to a boll until tender, 20 minutes or longer, depending on size. Do not cook until mushy. Preheat oven to 200 degrees. Drain potatoes and when they are cool enough to handle, peel them. Cut them into V inch thick slices and put into a heat proof mixing bowl. Sprinkle with salt, pepper, wine, and oil. Toss while warm. Cover the bowl with foil and put in the oven briefly to warm through. Turn Into a serving dish and serve while warm. Yields 8 cups and simmer salad cucumbers Salt and freshly ground black pepper 2 Firm, fresh unblemished 1 Tablespoon white vinegar Tablespoons peanut, vegetable or com oil Chopped Parsley for garnish 3 Use a swlvel-blade- d paring knife and peel the cucumbers. Split each cucumber In half. Using a metal ball cutter or a spoon, scoop out the cucumber seeds. Slice each half and put In a mixing bowl. Sprinkle lightly with salt, cover and chill at least half an hour r Line a mixing bowl with cheesecloth and pour the cucumbers into IL Squeeze lightly but firmly to extract much of the liquid. Turn them Into another bowl and sprinkle with salt and pepper. Add the oil and vinegar and toss. Put Ina serving dish and serve sprinkled with chopped parsley as a garnish.
